What I Ate Yesterday – Day 66

Yesterday – Saturday 1/21 – Day 66

When I got up, I had my usual cup of coffee with milk (trying milk now instead of HWC).

At 2:30pm, I ate what you see above.  This time, instead of slicing my beef roast, I cooked the last piece of that roast whole.  It was a bit tough, but after letting it rest for a bit, omg, it was so good!!!  As for the chicken, I had frozen a rotisserie chicken before my trip so I took that out and boiled it.  That was just like stewed chicken!  The top of the plate is bacon ends with some shrimp added to the mix.  I seriously loved this meal!!!

At 8:30pm, I cooked some ground beef then added leftovers from the past two days which included bacon ends and a bit of sliced beef plus a piece of pork chop, oh and also some eggs.  What I do is save anything I don’t finish from my plate then I use that for a new meal after a day or two.  If I don’t use it up right away, I freeze the cooked mix so it does not go to waste and will thaw later.

At 9:00pm, I had a decafe with whole milk to finish my meal.

At 1:15am, I could not sleep.  Felt hungry.  I got up and heated up more leftovers from dinner and ate the rest.  I heated that in the microwave once I made sure my visiting mouse was not behind it (so creaped out!!!).  Now I have no more leftovers!  Nothing went to waste!

Food that entered my mouth yesterday: beef shoulder roast, chicken, bacon ends, shrimp, ground beef, pork chop, eggs, butter, milk, coffee, pepper, lots of water.

(I think I’m growing balls! Let me look… yes, I see one starting to grow!)
