Easy 4-Ingredient Mexican Chicken and Beans Recipe

INGREDIENTS:

1 lb uncooked chicken breast strips or chunks
1 package (1 oz) Old El Paso taco seasoning mix (or store brand)
1 can (15 oz) Progresso black beans, drained, rinsed
1 can (11 oz) whole kernel corn with red and green peppers, undrained

DIRECTIONS:

1:  Spray 10-inch skillet with cooking spray. Add chicken to skillet; cook over medium-high heat 8 to 10 minutes, stirring occasionally, until no longer pink in center.
2:  Stir in seasoning mix, beans and corn (including liquid with the corn). Cook over medium-high heat 8 to 10 minutes, stirring frequently, until sauce is slightly thickened. If sauce is too thick, add a bit of water. Serve with tortillas if desired.

Darlene’s Tips:  If you can’t find mexican canned corn with red and green peppers, you can use plain and add your own peppers or pick up some frozen peppers.  You can substitute any beans if you don’t like black beans. Pinto beans would be awesome. Or add a mixture of beans.  You could add a dollop of sour cream on top of each serving and also serve with guacamole and pico along with tortilla chips. Ole!
