TIP: Last time I made egg rolls, I baked them all lined up on a cookie sheet. It was so much easier than frying a few at a time in oil, and less calories too! I think there were baking directions on the back of the package, but I’m not good at following directions. I’m sure I did my own thing. I know that I sprayed them a bit with cooking spray and they crisped up nicely. Then I froze them, but they lost the crispness when thawed but were still super yummy. They might have crisped up again if heated in the oven but I just nuked them.
