Five-Ingredient Fried Brown Rice Recipe

INGREDIENTS:
1 1/2 cups uncooked brown rice
3 cups Progresso chicken broth (from 32-oz carton)
4 eggs, beaten
1 lb ground sausage (flavor of choice)
1 bag (12 oz) frozen sweet peas

DIRECTIONS:
1: In large covered pot, heat rice and chicken broth to boiling over high heat. Reduce heat to low; cover, and cook 35 to 40 minutes or until rice has absorbed all of the broth.
2: Heat a large non-stick skillet over medium-high heat (add a bit of oil if it’s not a non-stick pan). Cook eggs in skillet until set but still a bit runny. Transfer to bowl and set aside.
3: In same skillet, cook sausage, breaking up with wooden spoon. After sausage is cooked, fold in hot rice, eggs and frozen peas and cook an additional 3 to 5 minutes or until peas are thawed.
Darlene’s Tips: You can add salt or pepper to taste. You could also do this with white rice. Just cook the white rice as directed on the package.
