Parmesan Crusted Pork Chops Recipe

INGREDIENTS:

1 or 2 eggs
1/4 cup Italian style bread crumbs
1/3 cup Parmesan cheese
4 pork chops
1 tablespoon olive oil or no stick spray

DIRECTIONS:

1: Heat oven to 400°F. Line cookie sheet with foil. Place cooling rack on cookie sheet. Set aside.
2: In small bowl, beat 1 or 2 eggs (depending on how big your chops are). In another small bowl, mix 1/4 cup bread crumbs and 1/3 cup Parmesan cheese.
3: Dip each of 4 pork chops into egg mixture, then into bread crumb mixture, turning to evenly coat. Place coated pork chops on cookie sheet.
4: (you can skip this step, see my tips below) Heat 10-inch skillet over high heat. Add 1 tablespoon olive oil, swirling to coat. Cook coated pork chops about 2 minutes on each side or until brown. Place back on cookie sheet.
5: Bake until pork is no longer pink in center and meat thermometer inserted in center reads 145°F (10 to 20 minutes, depending on thickness).

Darlene’s Tips:  You can skip the skillet step and just bake if you want. Spray the chops on both sides with cooking spray so they can “oven fry.” Just bake as directed above until no longer pink in center. Time can vary depending on thickness of the chops.
