Easy Slow-Cooker Mashed Potatoes Recipe

INGREDIENTS:

3 cups heavy whipping cream
5 lbs potatoes

DIRECTIONS:
1: Spray 5-quart slow cooker with cooking spray. Pour whipping cream into slow cooker.
2: Peel potatoes, then cut into 3/4-inch cubes. Add potatoes to slow cooker being sure to submerge potatoes in cream. If all potatoes are not submerged, add enough water to cover potatoes.
3: Cover; cook on High heat setting about 6 hours or until potatoes are very tender and can be mashed easily by pressing against side of cooker with spatula.
4: Mash potatoes using a masher or beat with electric mixer on low speed until well blended. Do not over mix. Cover; keep warm on Warm heat setting until serving time, up to 2 hours. Stir before serving.

Darlene’s Tips: You can add salt to taste when you pour in the cream and stir (1 to 2 teaspoons). You could test this recipe by cutting it and using a small slow cooker before the holiday just to be sure it works for you.
