Please remember that I don’t eat this stuff so I did not test this recipe. I’m just posting so you can try it!
Tex Mex Mac & Cheese Casserole Recipe
INGREDIENTS:

3 cups cooked pasta of your choice
1 can (18 oz) Progresso Traditional Chicken Cheese Enchilada flavor soup
1/2 cup milk
2 1/2 shredded Mexican cheese blend

DIRECTIONS:
1: Heat oven to 400°F. Spray 2-quart casserole with cooking spray.
2: Heat soup and milk to boiling in a 3-quart saucepan. Remove from heat and stir in cheese until melted. Stir in COOKED pasta. Spoon into casserole dish.
4: Bake uncovered 20 minutes or until edges are bubbly. Refrigerate leftovers.
Darlene’s Tips: You can experiment with different varieties of soup and cheese to create other savory casseroles! Use different pasta shapes too, like bows, ziti, penne, shells, etc. You can also add some frozen veggies to the mix or some cooked meat. You can sprinkle the top with bread crumbs or croutons (before baking) for some crunch. Have fun with it!
