Peeps Ice Cream Pie with Sugar Cookie Crust – Easter Recipe

Peeps Ice Cream Pie with Sugar Cookie Crust – Easter Recipe

INGREDIENTS:

1 roll (16.5 oz.) Pillsbury refrigerated sugar cookie dough
1 pint strawberry ice cream
1 container (7 oz.) marshmallow fluff
Whipped cream, for topping
Multiple colors of Peeps marshmallow bunnies, for decorating

DIRECTIONS:

1:  Preheat the oven to 350ºF. Grease a 9-inch pie plate with cooking spray.

2:  Press the cookie dough evenly into the bottom and sides of the pie plate to form a crust (see my tips below). Place the pie plate on a baking sheet and bake for 25-30 minutes or until the crust is lightly golden. Remove and let cool completely before filling. You can place it in the freezer to cool quickly.

3:  Meanwhile, remove the ice cream from the freezer and allow it to sit on the counter for 5-10 minutes to soften slightly. In a large bowl, combine the softened ice cream and marshmallow fluff. Do not completely combine; you just want the marshmallow fluff to swirl with the ice cream. Pour the mixture into the cooled crust. Freeze for at least 3 hours.

4:  Just before serving, dollop the pie with whipped cream and place Peeps marshmallows right in the middle. Serve.

Darlene’s Tips:  You can break apart the cookie dough and press balls of dough into your hands then just place those flattened pieces in the pie plate, piecing them together by overlapping a bit, until the plate and sides are covered (or just the bottom, no rules). Bake as directed above. Or use a ready made graham cracker crust if you want!  You can place the ice cream in the microwave for 10 seconds to soften quickly. Not soft enough? Do 5 more minutes at a time until soft enough.  If you don’t have marshmallow fluff, just skip that part and use more ice cream. Use any flavor of ice cream that you like!
