Homemade Vanilla Pudding Recipe

INGREDIENTS:
1/3 cup sugar
2 tablespoons cornstarch
2 cups milk
2 large egg yolks, slightly beaten
2 tablespoons butter, softened (not margarine)
2 teaspoons vanilla extract
(see my tips below)

DIRECTIONS:

1:  Mix sugar, cornstarch and salt in a saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.

2:  Pour about half of the hot mixture into the bowl of slightly beaten egg yolks, then pour the egg mixture back into the saucepan and mix. Boil and stir 1 minute then remove from heat. Stir in butter and vanilla.

3:  Pour pudding into dessert dishes. Cover and refrigerate about 1 hour or until chilled. Store covered in refrigerator.

Darlene’s Tips:  You can add any flavor of extract that you like.  For chocolate pudding, increase sugar to 1/2 cup, add 1/3 cup unsweetened cocoa powder into sugar mixture and leave out the butter.  For butterscotch pudding, make like vanilla but use brown sugar instead of white.
