Please remember that I don’t eat this stuff so I did not make this recipe. I’m just posting so you can try it!
INGREDIENTS:
1 box Betty Crocker Super Moist yellow cake mix
1/2 cup vegetable oil
1/4 cup milk or water
3 eggs
2 cups coarsely shredded zucchini (about 2 medium)
(see tips below)
DIRECTIONS:
1: Heat oven to 350°F. Spray bottoms only of two 8×4-inch loaf pans with cooking spray.
2: In large bowl, stir cake mix, oil, milk and eggs until well blended. Add zucchini and mix well. Divide batter evenly between pans.
3: Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans to cooling rack. Cool completely, about 1 hour.

Darlene’s Tips: Don’t like zucchini bread? I bet this would work with shredded apples instead. Want a different flavor? Use a spice cake or carrot cake mix. Feel free to toss in some chopped nuts of your choice or any flavor of baking morsels that you like. You can freeze these loaves (wrap in plastic wrap) and slice just what you need while frozen and put the rest back in the freezer. Let the slices sit at room temperature for a few minutes and in just a few minutes they are ready to eat!
