One Pot Mac & Cheese Recipe – Just 3 Ingredients

INGREDIENTS:
1 lb uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese (8 oz)
1 can (12 oz) evaorated milk (like this stuff)
(see my tips below)

DIRECTIONS:

1:  In 5-quart pot, heat evaporated milk and 4 cups hot water to boiling.  Add macaroni and bring back to a boil.

2:  Reduce heat to simmer and cook uncovered for about 8 to 10 minutes, stirring frequently.  Do not drain.

3:  Remove from heat and stir in cheese until melted.

Search for stuff you need on Amazon, on eBay and at Walmart!

Darlene’s Tips:  If you have too much liquid, drain some before adding the cheese.  If you don’t have enough liquid, you can add some water or some milk, any milk, whole, any percent or skim.

INGREDIENTS:
Round Cookies of your choice (store bought or bake your own)
White frosting
Assorted gel food colors
Jelly beans
PEEPS brand marshmallow chicks
(see my tips below)

DIRECTIONS:

1:  Separate frosting into small bowls and tint as desired.

2:  Pipe a continuous circle of frosting to create a nest, leaving a space in the center.

3:  Add a few jelly beans to the nest (see image).

4:  Top with a Peeps chick.

Search for stuff you need on Amazon, on eBay and at Walmart!

Darlene’s Tips:  You can use peanut m&m candies instead of jelly beans. You can also make all the nests green so you don’t have to mix as many nest colors.

INGREDIENTS:
1 tub (1.5 quarts) chocolate ice cream
1 package (14.2 oz) Oreo cookies, crushed
1 jar (12.8 oz) hot fudge topping
1 tub (1.5 quarts) vanilla ice cream
24 oz frozen whipped topping, thawed
Betty Crocker candy sprinkles and Rainbow Candy Chips

DIRECTIONS:

1: Remove chocolate and vanilla ice cream from freezer and allow to stand at room temperature for 15 minutes. Meanwhile, in a medium bowl, combine crushed Oreo cookies and hot fudge sauce until thoroughly mixed.

2:  Scoop chocolate ice cream into a 9-inch springform pan lined with parchment paper. Top chocolate ice cream with cookie-fudge mixture and place scoops of vanilla ice cream on top of the cookie layer. Spread the ice cream flat and even with a spatula. Return to freezer until firmly frozen, at least 4 hours or overnight for best results.

3:  Working quickly, remove the cake from the springform pan and transfer to a serving platter. Frost cake with whipped topping, piping decoration around the edges with an icing bag fitted with a large star tip if desired.

4:  Return to freezer until firm, about 2 hours. Decorate before slicing and serving.

Darlene’s Tips:  You can crush the cookies by placing a few at a time in a plastic bag and going over them with a rolling-pin. You can experiment with different types of cookies and any flavors of ice cream. You could try making single servings by building the “cake” in muffin tins. Not sure if they would easily pop out, so single silicon muffin cups would be great! Even if they don’t pop out, you can just eat right from the cup!

Below is a list of my Top 10 most viewed videos for the week of 3/23/20 – 3/29/20.  If you have not seen them all, now is a great time to binge watch!

My youtube slump for March is real. I ended up earning $265 less for March than I earned in February.  That shit happens.  I’m hopeful that it will turn around, because it usually does.

Example: Last November I earned $392 less than in October. That was a big cut.  But then I earned a whopping $1,439 more in December than in November!  That was an amazing increase!  Then January was down a bit.  February was up by a lot (actually my highest month so far).  And now March is down.  It’s always like that. Lots of ups and downs.

Moving on to April! I love having a fresh new start to each month.

Cheesy Pepper Bread – Easy Bisquick Recipe

INGREDIENTS
3 cups Bisquick Original baking mix
1 cup shredded sharp cheddar cheese
1/4 cup vegetable oil
3 eggs
1 (10.75 oz) can condensed cheddar cheese soup (like this)
1 jalapeño pepper, seeded and diced
1/2 red bell pepper, seeded and diced
1/2 green bell pepper, seeded and diced
(see my tips below)

DIRECTIONS:

1:  Heat oven to 350°F. Lightly grease a 9-by-5-inch loaf pan.

2:  Stir all ingredients together in a large bowl until well combined. Spread batter evenly into prepared loaf pan.

3:  Bake 1 hour until a toothpick inserted in the center comes out clean. Cool loaf 20 minutes in pan, then transfer loaf to a cooling rack. Completely before slicing.

Darlene’s Tips:  If you don’t want the peppers, you could skip those and just make the cheesy bread.  Or you could try other ingredients like chopped fresh tomatoes, green olives, pimentos, chopped onion, chopped ham or pepperoni, whatever!

INGREDIENTS
Cupcakes of your choice
2 cups shredded coconut
Yellow food color
1 container Betty Crocker Rich & Creamy vanilla frosting
Mini chocolate baking bits (like this)
Orange gumdrops
(see my tips below)

DIRECTIONS:

1: Bake your cupcakes. Cool completely before decorating.

2: Place coconut in resealable food-storage plastic bag. Add 6 to 8 drops of yellow food color. Seal bag and shake to mix.

3:  Frost cupcakes with frosting. Top with yellow coconut.

4:  Use the chocolate chips for eyes. Cut orange gumdrops to look like beaks and place on cupcakes. Store loosely covered.

Darlene’s Tips:  You can use any kind of candy you like to make the chick faces.  You could even pipe on frosting. You can also decorate store bought cookies like this.

Easy Frozen Berry Cobbler Recipe

INGREDIENTS
4 cups frozen berries of your choice
1 egg
1 cup sugar
1 cup all-purpose flour
6 tablespoons butter, melted
(see my tips below)

DIRECTIONS:

1:  Heat oven to 375°F. Lightly grease 8-inch square (2-quart) glass baking dish with shortening or cooking spray. Place berries in dish.

2:  In medium bowl, stir egg, sugar and flour until mixture looks like coarse meal. Sprinkle over berries. Drizzle melted butter over topping.

3:  Bake 40 to 45 minutes or until topping is lightly browned and filling is bubbly. Cool 10 minutes and serve. Store leftovers in refrigerator.

Darlene’s Tips:  You can use frozen fruit instead of berries.  I’m thinking you could also use canned fruit, just drain it first.  Pop in the microwave for a minute to serve warm after it’s stored in the fridge.  Top with whipped cream, pudding, ice cream or whatever!

Cookies & Cream Blossoms – Easy Sugar Cookie Dough Hack

INGREDIENTS
1 roll (16.5 oz) Pillsbury refrigerated sugar cookies
3 tablespoons unsweetened baking cocoa (like this)
3/4 cup chopped Oreo chocolate sandwich cookies (about 6 cookies)
30 Hershey’s Kisses
optional: 1/4 cup white vanilla baking chips
(see my tips below)

DIRECTIONS:

1:  Heat oven to 350°F.  Break up cookie dough in large bowl. Stir or knead in cocoa and chopped cookies until well mixed.

2:  Shape dough into 30 (1-inch) balls. Place 1 inch apart on ungreased cookie sheets. Bake 8 to 12 minutes or until edges are set. Remove from oven.

3:  Immediately top each cookie with 1 Hershey’s Kiss, pressing down firmly so cookie cracks around edge.  Remove from cookie sheets to cooling racks. Cool completely, about 2 hours or until chocolate is set.

Optional:  In small bowl, microwave white vanilla baking chips uncovered on High 30 to 45 seconds or until chips can be stirred smooth. Drizzle over cooled cookies. Let stand about 15 minutes or until drizzle is set.

Darlene’s Tips:  You can make these cookies without the baking cocoa.  You can also chop up any cookies, does not have to be oreo’s.  Add up to 1/3 cup chopped nuts if you want.
