I just got back from Shaw’s in Sanford and if you happen to be heading out, stop by to check out their reduced sections.  I don’t have prices for you because I was in a hurry. Scruffy was in the car and even though it was cool enough for him, he tends to miss me :O)

Refrigerated reduced produce was full and I did see some whole celery stalks for $.99 each and bunches of other stuff.  In the reduced produce over by the swinging doors, they had lots of 3 pound bag of apples for $1.25 each, some green, some red.  Great for baking!  They were in good shape too.

Reduced deli had lots of stuff in it too, but I didn’t study it.  Reduced dairy had lots of hald gallons of Over the Moon milk and the ones I checked were $1.69, I think.  And I think you can get a $1/1 Over the Moon milk coupon here. They also had Shaw’s cottage cheese and some other things.

I also took down some prices of a few Essential Everyday items that you can pick up with the coupon in the new Shaw’s coupon book. I’ll post that in a bit.

Oh, and there was not a watermelon coupon to be found. I hope some of my local readers got some!  I gave one to an elderly couple who was purchasing only a watermelon. They said they had to bring it to a party tomorrow.  It was $7.99 but only $4.99 after the coupon. You would have thought I gave them gold!  Felt good :O)

I started my coupon blog in August of last year.  I can’t even begin to tell you how much I love it.  My blog allows me to help others save money the way the bloggers that I followed in the beginning (and still follow) helped me… Chrystie over at I Love to Gossip (mega hugs to CC!), Lynn over at Maven of Savin’, Paul over at I Heart the Mart… and so many more!

I love blogging so much that every day I think of new blogs I’d like to start (crafts, recipes, business, restaurants, etc). Only trouble is, there’s not enough time in the day to go blog crazy.  But, I have an idea!

I’d like to start a community blog that YOU can contribute to!  I would set up the blog and anyone who is interested could post on it.  Don’t know wordpress? It’s easy.  I could teach you with an online tutorial! You would be an author on the blog. You would feel like a total big shot! :O)

So far, all I know is the blog would need some sort of theme.  I’m thinking Maine.  Anyone could post anything as long as it has something to do with Maine. If you live it Maine, you’re in! If you have a business in Maine, that’s perfect! If you have a story about Maine, super cool! I would want a wide variety of posts.

I’m just curious, how many of you would be interested in contributing to a Maine blog?  You could advertise your own blog, your facebook page, your business or just post for fun!  But, I don’t want it to be all advertisement. You do have to be a little bit interesting, you know what I mean? :O) I want a rockin’ Maine blog!

And if you’ve ever dabbled with the idea of blogging, this would be an excellent way to give it a try! Then if you decide you want your own blog, go for it!  You can still contribute to the community blog as a way to keep new traffic coming to your own blog!

This is just an idea at this point… but it’s a serious idea and something I really want to start soon.  If you think you might like to contribute to a Maine blog, please leave a comment and let me know. I would want a minimum of 10 contributing writers to start.

One coupon that I find interesting is the $1 OFF Stella Cheese.  I’m quite sure I’ve seen that in reduced deli before.  I have learned to print all deli cheese and meat coupons because I never know what will pop up in reduced!

Another coupon I like is the $1 OFF a fresh pineapple.  I know I have never found a pineapple in reduced produce, but there’s always a first time!

I found this coupon next to the cut watermelon in the Sanford Shaw’s.  It says save $3 instantly off the purchase of any watermelon (minimum $3.01 watermelon purchase). It makes you think you should also buy beer, but it states “no beer purchase required!”

I picked up 2 cuts of watermelon ($1.52 and $1.56) that came to a total of $3.08.  I paid only 8¢ after the coupon!

2. I use what I have on hand to make it

I whip up all kinds of odd stuff and thought maybe you would like to know what I make so you can maybe get some new ideas!

NOTE: this is not even in the oven yet so I have no clue how it comes out.  I will say that I have never baked anything that we didn’t absolutely love!

I started with 1/2 a box of carrot cake mix. I must have used the other half in another recipe.  Since 1/2 a box is not enough, I’m adding to it!

I added…

about 1/2 a blender full of Total cereal ground up into flour
about 1 cup pancake mix (I have bisquick but I need to use up my pancake mix first)
about 1 cup oatmeal
2 apples that needed some love, chopped in small and big pieces (I got lazy)
2 Kozy Shack pudding cups that I froze and let thaw, one rice and one tapioca
2 eggs
2 carrots that I shredded with a potato peeler
generous amount of ground cinnamon
splash of liquid coffee creamer, vanilla spice flavor
enough Newman’s Own diet virgin lemonade to make it mixable

I will bake at 375 degrees for however long it takes. My guess is 45 minutes to an hour since it’s fairly thick.  I maybe should have added more liquid.

And this is what is looks like right now.  I will update when it’s done!  I will make a glaze using 1/2 a tub of vanilla frosting that I’ll thin with lemonade.

UPDATE:  I ended up taking it out of the oven at 42 minutes.  I mixed a bit of lemonade into my 1/2 tub of frosting to make a sort of glaze (it was creamy white frosting).  I poked holes in the cake with a fork so the glaze will soak through it.  I did this IMMEDIATELY after taking it out of the oven.  I love frosting a hot cake as it always comes out so moist.  As you can see, the glaze was quickly soaking in around the edges.  I will update again when I cut into it and will let you know how it tastes!

UPDATE:  This was a huge success!!! I wish you could taste it!  If you love carrot cake, you would love, love, LOVE this!!!  The small bits of apple made this super moist and the bigger chunks are like a special treat… almost like apple pie in a cake!  This is the second time I use Total cereal “flour” and I love the robust flavor it gives the recipe.  I would have loved a scoop of ice cream on this, but no ice cream in the freezer.

The only problem with my way of baking is that I can never make the same thing twice.  My mother always says “this one is the BEST and you have to make it again” but I can never duplicate it. And that’s okay because the next one is always the best!

Do NOT be afraid to experiment with food!  There are no rules when it comes to baking!  Play with it and you’ll be amazed at how good it comes out.  Ready, set… GO!
