2-Ingredient Soda Pop Cupcakes Recipe

INGREDIENTS:

1 box Betty Crocker Super Moist white cake mix
1 can (12 oz) carbonated beverage of choice
optional: frosting of your choice

DIRECTIONS:

Step 1:  Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups.

Step 2:  In large bowl, beat dry cake mix and carbonated beverage with electric mixer on low speed for 1 minute, then on medium speed 2 minutes, scraping side of bowl. Divide batter among cups.

Step 3:  Bake 15 to 18 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove to cooling rack to cool completely, about 1 hour. If desired, top with your favorite frosting.

Darlene’s Tips:  If you want white cupcakes, use clear flavored soda. Feel free to add an egg to the mix if you want for a more firm texture. You could also add a tablespoon or two of oil to make them more moist.
