I feel like baking and I have some apples that I bought in reduced produce so let’s put them to good use!
Apple Cereal Crisp
Here’s the so called recipe (I don’t measure… sorry!):
Batter:
about 1/3 cup of dry oatmeal
about 1 cup pancake mix
1 egg
1 tub Marzetti vanilla yogurt fruit dip from my freezer (thawed)
we don’t really like that dip but when I get it free I freeze and use in recipes
3 small apples cut into chunks and small pieces (I left peeling on)
1 carrot shredded with a potato peeler
generous sprinkle of cinnamon
pour into pan
Topping:
about 1/2 cup dry oatmeal
2 handfuls of Crunchy Nut cereal
2 handfuls of Honey Nut Cheerios
butter
sprinkle on top of batter and dot with butter
I’m shoving this in the oven at 375 degrees and I’m guessing it will take 30 minutesl I’ll update when it come out!
UPDATE: I baked it for 30 minutes at 375 degrees but it was not done so I turned it down to 350 degrees and baked for another 15 mintues. It does not look a whole lot different than the before picture. Now I want to make pudding to pour on it when I cut it after it cools.
UPDATE: This dessert was a major success! I discovered that I forgot to take milk out of the freezer so I could not make pudding. Instead I opted to top my mother’s serving with Reese’s Ice Cream and drizzled a simple glaze (powdered sugar thinned with water) over the top. I skipped the ice cream and had just a small piece with a bit of glaze. It was super good! The apples cooked just right and the crunchy topping was all the sugar that I needed (notice I did not add sugar to the mix). Well, that glaze helped sweeten it up too :O)
