I’m craving cake so I thought I’d whip something up! I had a half of a box of cake mix leftover (used the other half for cupcakes) so I thought I’d start with that and add other stuff that I have handy!
Remember, I don’t measure. I don’t post my recipes expecting you to make them. I just want you to see that you are allowed to experiment!
1/2 box lemon cake mix
about 1 cup pancake mix (I have lots of pancake mix so I use it in recipes)
about 1/4 cup oatmeal (happens to be old fashion, not quick oats)
about 2 tablespoons powdered lemonade mix (pucker power!)
1 small tub (single serve) Marzetti cream cheese fruit dip
2 eggs (and a tiny piece of shell… ooops!)
2 bananas that I froze and let thaw (freeze without the peeling)
about 1/2 cup milk
about 1/2 cup water
I stired with a spoon. Too much work to use a mixer! Then I got busy on the phone and it sat in the bowl for maybe an hour? Got quite puffy! I just poured it into the cake pan and put it in the oven at 350 degrees and I’ll check it in 35 minutes. I will update in a bit!
TIP: I always cover the bottom of my cake pan with a round piece of wax paper. Makes it so easy to turn the cake out!
Success! While waiting for it to cool, I took Scruffy for a walk. Then I took the rest of the pics and the piece of cake you see at the very bottom is almost completely devoured!

Then I decided to frost this one because I’m in desperate of something sickeningly sweet. I used strawberry frosting because that’s the one that needs to be used first. I let my stockpile determine what I use!
And this is the piece I’m eating! It kind of has the texture of a muffin. So good! I need milk now :O)
