Since it’s the weekend, I thought I’d whip up something tasty for dessert. After all, need a sensational dessert to follow my wacky build-a-burger, right?
I had some apples that needed love and also lots of bananas taking up room in the freezer. And one of my followers, Patricia, gave me the idea of using breakfast bars as topping for apple crisp, so I was anxious to give that a try on myh cobbler (kind of cobbler-ish)… but with granola bars, since that’s what I have on hand.
I do not measure so if you want to try this, just be brave and wing it!
4 bananas
4 apples chopped with peelings
2 carrots shredded with potato peeler
about 1/2 cup crushed Total cereal
about 1/2 cup dry oats
1 tub Marzetti french vanilla yogurt fruit dip, 13.5 oz
2 eggs (that I got for FREE last night)
generous sprinkles of cinnamon and nutmeg
enough pancake mix to hold it together
I mixed that all up then plopped it into my 9 x 13 pan. Then I topped it with a bit more dry oats and I cut up 5 Nature Valley Fruit & Nuts rranola bars and sprinkled those chunks on top. Truth be told, maybe only 4 bars actually made it on top of the batter. I think one bar went directly into my belly.
I popped this into the oven at 350 degrees and I’ll check it in 30 minutes! I will update when it’s done!
Update: This baby took 55 minutes to cook. Then I let it cool just a bit and I topped it off with some frosting from a tub, Rainbow Chip to be exact. I love letting the frosting melt on to the hot dessert! And I’ve got to tell you, this Mixed Fruit and Yogurt Cobbler with Granola Bar Topping is FANTASTIC!
