Yes, you read that title right! I had a little dilemma yesterday. I had some leftover tuna salad but barely enough for one sandwich. My mother loves open face sandwiches and I knew she needed more spread.
I had an idea. I had some leftover cooked cauliflower in the fridge so I mashed it and added it to the tuna salad (see my awesome produce score here). I also added a dab more mayo and ta da! I had tripled the amount of sandwich spread and it was DELISH!
Honestly, it was super good! There was enough tuna to still give it tuna flavor and the mashed cauliflower beefed it up without adding more calories (‘cept for the little extra bit of mayo).
I just mashed more cauliflower and I’m also boiling some frozen salami (remember that salami I got at Roger’s?). I’ll be grinding that salami after most of the salt and fat is boiled out and will make a salami and cauliflower spread next. And I think I’ll add a bit of mustard and relish to that spread… yum!
I have used chopped hard-boiled eggs before to add to ham salad, chicken salad and even tuna salad. Now I have discovered that cauliflower is just as good! I’m going to try other mashed veggies like carrots, zucchini, and even broccoli florets. We are not fussy in this house!
