- 1/3 cup seasoned bread crumbs
- 1/4 cup nonfat Parmesan Cheese topping, or grated Parmesan Cheese
- 4 small zucchini, quartered lengthwise
- 1/4 cup egg substitute or 1 egg beaten
In bowl, combine bread crumbs and cheese topping. Dip zucchini in egg (egg substitute), then in crumb mixture. Place on baking sheet coated with non-stick spray. Bake at 450 degrees for 20-25 minutes or till golden brown. Serves 4.
Tip: You can substitute Panko for the bread crumbs. You can purchase pre-seasoned Panko or buy the plain variety and add your choice of seasonings.
