NOTE: I get messages asking me why I post these types of recipes while I’m following a zero carb animal kingdom only food plan.  My answer is because I’m following ZC, but I bet you’re not! Just because I eat a certain way does not mean I have to limit myself to sharing only meat recipes. I’m not the carb police! lol

Cheddar Cracker Chicken Tenders Recipe

INGREDIENTS:

2 eggs
2 cups chedder crackers, coarsely crushed (like Cheez-It or Cheese Nips)
1 package (14 oz) chicken tenders (not breaded)
1/4 teaspoon salt
2 tablespoons butter, melted

Darlene’s Tip:  You can use any brand of cheddar crackers and even the white cheddar would be good!

DIRECTIONS:

Step 1:  Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray.

Step 2:  In shallow dish or pie plate, beat eggs. In another shallow dish or pie plate, place cracker crumbs. Dip each chicken tender into eggs, then coat with cracker crumbs; place in pan. Sprinkle with salt; drizzle with melted butter.

Step 3:  Bake 12 to 18 minutes or until chicken is no longer pink in center (165°F). Serve with your favorite dipping sauce!
