Cake Batter Pancakes Recipe – Make Any Flavor You Want!

NOTE: I get messages asking me why I post these types of recipes while I’m following a zero carb animal kingdom only food plan.  My answer is because I’m following ZC, but I bet you’re not! Just because I eat a certain way does not mean I have to limit myself to sharing only meat recipes. I’m not the carb police! lol

Cake Batter Pancakes Recipe

INGREDIENTS:

1 1/4 cups all-purpose flour
1 box Betty Crocker SuperMoist cake mix (any flavor)
1 tablespoon sugar
3/4 teaspoon baking powder
2 large eggs
1 or more cups milk (to get pancake batter consistency)

Darlene’s Tip: You can buy any brand cake you want and in any flavor.  And remember, you can freeze these and serve later.  Make them toaster size and pop them in the toaster to heat.  Or heat for a few seconds in the microwave. You can also heat in a pan on the stove top if you want.

DIRECTIONS:

Step 1:  Combine flour, cake mix, sugar and baking powder in a bowl and mix.

Step 2:  Add 1 cup of milk and eggs. Stir until smooth. Add additional milk until batter has the consistency of pancake batter (different cake mixes may require more or less liquid). You can also add more cake mix if you want your pancakes to have a stronger cake batter flavor.

Step 3:  Preheat a skillet to low to medium heat.  Pour batter in 1/4 cup measurements onto skillet and let cook until bubbles form on top, about 2-3 minutes. Flip and cook for 1 minute more.

Serve with glaze if desired (for simple glaze, just mix confectioner’s sugar with a few drops of water or milk and stir then add more liquid as needed, just a drop at a time).  You could also serve with pancake syrup or flavored syrups like chocolate, strawberry, caramel, etc.  You might also want to top with whipped cream or ice cream. Just have fun with it!
