Pancake Breakfast Muffins Recipe

INGREDIENTS:

2 cups Bisquick Original pancake and baking mix
2 large eggs
1 cup milk

DIRECTIONS:
1: Preheat oven to 375°F. Line 12 muffin tins with cupcake liners.
2: In a large bowl, combine Bisquick pancake and baking mix, eggs, and milk. Stir until just mixed. Mixture may have some lumps.
3: Fill prepared muffin tins 2/3 full. Bake for 15 – 20 minutes or until a toothpick inserted in the center comes out clean. Serve warm with butter, or cool to room temperature and freeze for later.
Darlene’s Tips: You can pop these in the microwave for 15 to 20 seconds to warm them up. Or just take them on the go as is. What an easy and convenient breakfast!
