Easy 2-Ingredient Peach Pie Cups Recipe

1 can (12.4 oz) Pillsbury refrigerated cinnamon rolls with cream cheese icing (8 rolls)
1 1/3 cups peach pie filling & topping (from 21-oz can), coarsely chopped (see my version here)

1:  Heat oven to 375°F. Spray 8 regular-size muffin cups with cooking spray.

2:  Separate dough into 8 rolls and let stand 10 minutes to make pressing them into the muffin cups easier. Set icing aside.

3:  Place rolls cinnamon side up into muffin cups. Press in bottoms and up sides of cups.

4:  Spoon 2 generous tablespoonsful pie filling into each dough-lined cup. Bake 14 to 18 minutes or until golden brown; cool in pan 5 minutes.

5:  Using a thin metal spatula, run around edges of rolls to loosen, and remove to serving plate. Transfer icing to small resealable food-storage plastic bag and cut small corner off one end. Drizzle icing over rolls. Serve warm.

Darlene’s Tips:  You can use any flavor pie filling. I made a Cherry Walnut version in this concoction video!  If you need more icing, just mix powdered sugar and keep adding just a few drops of water until you get the consistency you like. You can add extract and food coloring too. These are best served warm. You can pop them in the microwave for 15 seconds or more depending on your microwave.
