DIRECTIONS:
1: Pulse cookies in food processor (or crush in bag with rolling pin) until crumbs form.
2: Transfer cookie crumbs to small bowl and mix with 1/4 cup of the frosting (also add sprinkles if desired).
3: Use 1/4-teaspoon measure to shape little balls of cookie mixture.
4: Line 8-inch square pan with foil, leaving foil overhanging at 2 opposite sides of pan. Spray foil with cooking spray.
5: In medium microwavable bowl, microwave baking chips uncovered on High 1 minute. Spoon remaining container of frosting over chips. Microwave uncovered on High 30 seconds then stir. If necessary, continue to microwave in 15-second increments until mixture can be stirred smooth.
6: Pour fudge mixture into pan. Space cookie balls evenly on top, and press into fudge mixture. Spread fudge mixture evenly in pan to cover balls. Top with more sprinkles if desired.
7: Refrigerate uncovered until set, about 1 hour. Remove from pan by lifting foil then peel foil away. Cut into deisred size pieces. Store covered in refrigerator.
Darlene’s Tips: You could also add some chopped nuts either to the cookie mix or to the frosting mix. For a more firm fudge, use less frosting and more morsels. You can go all morsels if you rather have it more like candy and not so much like fudge. Experiment!
