Heat oven to 350°F.  Break up cookie dough in large bowl. Stir or knead in flour until well blended.

Shape tablespoonfuls of dough into balls.  Roll the balls in the pecans and press the pecans into dough a bit by rolling each peacan covered ball between your hands. Place balls 1 inch apart on ungreased cookie sheets.

Bake 12 to 16 minutes or until edges are light golden brown. Remove from oven, and using handle of wooden spoon, immediately make an indentation in center of each cookie. Cool 1 minute then remove from cookie sheet to cooling racks. Cool completely, about 20 minutes.

Microwave caramels and half-and-half (or milk) in a microwavable bowl uncovered on High 1 to 2 minutes, stirring every 10 to 15 seconds, until caramels are melted.

Spoon about 1 teaspoonful of caramel into indentation of each cookie. Cool 15 minutes.

Melt chocolate in microwave on high in 10 second intervals stirring after each until melted. Drizzle the melted chocolate over the cookies using a spoon then sprinkle with salt. Let stand about 15 minutes or until chocolate is set, or place in refrigerator or even the freezer to speed up that time.

Darlene’s Tips: You could totally skip the pecans if you want.  No need to roll the balls into anything. Or use different nuts if you prefer.  Salt is optional too.  If you like the look of the crystals but don’t want the salt, sprinkle with coarse sugar instead.
