Please remember that I don’t eat this stuff so I did not make this recipe. I’m just posting so you can try it!
INGREDIENTS:
7 cups peeled apples, sliced (3 to 4 large or 6 to 7 small)
1/2 package (12 cookies) Pillsbury Ready to Bake! refrigerated sugar cookies
3/4 cup packed light brown sugar
1 teaspoon ground cinnamon (or apple pie spice) plus a bit more for topping
DIRECTIONS:
1: Heat oven to 375°F. Spray 9 1/2-inch deep-dish pie plate with cooking spray.
2: In large bowl, gently toss apple slices with the brown sugar and cinnamon (or apple pie spice) until slices are coated. Pour evenly into pie plate.
3: Arrange 12 cookies on top of apple mixture. Lightly sprinkle a bit of the cinnamon (or apple pie spice) on top of cookies.
4: Bake 50 to 55 minutes or until topping is golden brown. Cool slightly before serving.

Darlene’s Tips: You can add some chopped nuts to the apple mix for a nutty twist. Serve warm with ice cream for an awesome dessert. A drizzle of caramel sauce over the top would be good too.
