3 Ingredient Banana Bread Cookies Recipe
IMPORTANT: Please remember that I don’t eat this stuff so I did not test this recipe. I’m just posting so you can try it if you want to. I’m not the carb police! I don’t want to tell you how to eat any more than I want you to tell me how to eat. We all have the wonderful right to do as we please. You know what I mean, jelly bean?
INGREDIENTS:
1 box (15.25 oz) yellow cake mix or spice cake mix
2 very ripe bananas
1 can (16 oz) vanilla frosting
Optional: dried bananas for garnish
Darlene’s Tips: You could add a drop of food coloring to the frosting or even try a different flavor of frosting. Cream cheese frosting would be great, especially if you opt for the spice cake mix!
DIRECTIONS:
Step 1: Preheat oven to 350°F. In a stand mixer or large bowl, beat together the cake mix, bananas, and 1 tablespoon of the vanilla frosting until well mixed.
Step 2: Spoon batter by tablespoonfuls onto a parchment-lined baking sheet and bake in preheated oven for 8-12 minutes, or just until the cookies set. Cool slightly before removing from baking sheet and transferring to cooling rack.
Step 3: Spoon frosting into a plastic zip-top bag. Microwave for 10-15 seconds, just enough to soften the frosting, then snip a small corner from the frosting bag and drizzle over cooled cookies.
