Easy Fiesta Nacho Casserole Recipe – Canned Soup Hack

INGREDIENTS:

1 bag (about 11 oz) frozen corn
1 can (10 3/4 oz) fiesta nacho cheese condensed soup ()
1/4 cup water
2 cups shredded deli rotisserie chicken (or any cooked chicken)
1 can (15 oz) black beans, drained, rinsed
1 1/2 cups shredded Mexican cheese blend (6 oz)
1 1/2 teaspoons chili powder
2 cups coarsely broken tortilla chips

DIRECTIONS:

1:  Heat oven to 375°F. Microwave corn as directed on package for minimum cook time.

2:  In large bowl, mix cooked corn, soup, water, chicken, black beans, 1 cup of the cheese and the chili powder.

3:  Spoon mixture into ungreased 8-inch square (2-quart) baking dish. Bake uncovered 30 to 35 minutes or until heated through. Top with chips and remaining 1/2 cup cheese. Bake 5 to 7 minutes longer or until cheese is melted.

Darlene’s Tips:  You can add chopped jalapeños if you like and you could also use pepper jack cheese instead of the mexican blend or use both! Serve with sour cream, guacamole and pico de gallo. A side of spanish rice would be great too.

Easy Cheeseburger Pizza Recipe

INGREDIENTS:

1 can (13.8 oz) Pillsbury refrigerated classic pizza crust
1/2 lb extra-lean (at least 90%) ground beef
1 cup tomato pasta sauce
1/4 cup chopped onion
1 cup shredded Cheddar cheese (4 oz)
1/4 cup dill pickle slices

DIRECTIONS:

1:  Heat oven to 425°F. Spray or grease 12-inch pizza pan. Unroll dough on pan. Starting at center, press out dough to edge of pan.

2:  Meanwhile, cook beef over medium-high heat in a skillet, stirring frequently, until thoroughly cooked then drain.

3:  Spread pasta sauce evenly over dough. Top with beef, onion and cheese.

4:  Bake 12 to 18 minutes or until edges are golden brown and cheese is bubbly. Top pizza with pickle slices, cut and serve.

Darlene’s Tips:  You can totally use a ready-made cheese pizza as your crust and still add all the other ingredients including sauce and cheese (to make it more saucy and cheesy).  That’s what I do for my mother’s pizza concoctions. I made her an Italian Sandwich Pizza and I put the pickles on with the other ingredients and let them cook. She loved it!  You can add the pickles with the other ingredients and let them cook if you want.
