Quick and Easy Christmas Cookies

INGREDIENTS:

check for ingredient coupons here
Store-bought cookies of your choice (or bake your own)
Candy melts of your choice (chocolate chips, vanilla morsels, almond bark, etc.)
Holiday sprinkles of your choice
(see my tips below)

DIRECTIONS:

1:  In small microwavable bowl, microwave morsels or bark 30 seconds at a time, stirring every 30 seconds, until candy is melted and can be stirred smooth.

2:  Dip each cookie halfway into melted candy; wipe off excess. Place on cooking parchment paper-lined tray. Immediately sprinkle with desired candies.

3:  Let stand until coating is firm, 1 to 2 hours. You can place in refrigerator to speed it up.

Darlene’s Tips:  You can tint white morsel melt with a drop of food coloring if you want red or green. You can also dip entire cookie. You could dip half one color, let harden, then dip the other half another color.  If you want to make your own sprinkles, you can crush hard candy in a bag with a hammer (cover bag with towel). Have fun!

3-Ingredient Sugar Cookie Truffles Recipe

INGREDIENTS:

1 package (16 oz) Pillsbury™ Ready to Bake!™ refrigerated sugar cookies
10 oz vanilla-flavored candy coating (almond bark or morsels)
1 tablespoon holiday candy sprinkles or decors

DIRECTIONS:

1:  Heat oven to 350°F.  Shape each cookie into a ball; place 2 inches apart on ungreased large cookie sheets.  Bake 9 to 12 minutes or until edges are light golden brown (center of cookies will be soft).

2:  Cool cookies for 5 minutes. Shape each cooked cookie into a ball. Refrigerate 10 to 15 minutes or until completely cooled and firm.  Meanwhile, line cookie sheet with cooking parchment paper; set aside.

3:  In medium microwavable bowl, microwave candy coating or morsels uncovered on high for about 30 seconds. Stir then heat another 30 seconds and stir. Continue heating and stirring every 30 seconds until melted and smooth.

4:  Dip cookie balls, one at a time, into melted candy coating. If necessary, reheat coating. Place on cooking parchment paper-lined cookie sheet. Immediately decorate with candy sprinkles. Refrigerate truffles about 10 minutes or until coating is set. Store covered in refrigerator.

Darlene’s Tips:  You can use red and/or green candy melts to coat the cookie balls. Or you can tint the white melt with food coloring.  You can also dip any flat cookie, even store-bought, into the melted candy and add sprinkles. Very easy way to make festive Christmas cookies!  Or buy donut holes to dip and decorate!

No Bake Christmas Wreath Cookies Recipe

INGREDIENTS:

1/2 cup butter
1 package (10 oz) miniature marshmallows
20 drops green liquid food color
3/4 cup white vanilla baking chips
5 cups any flake cereal (like corn flakes)
56 red cinnamon candies

DIRECTIONS:

1:  In large microwavable bowl, microwave butter uncovered on High 30 seconds to 1 minute or until melted. Add marshmallows; toss to coat. Microwave uncovered on High 1 minute 30 seconds to 2 minutes, stirring every 30 seconds, until marshmallows are completely melted and mixture is well blended.

2:   Stir in green food color to desired shade of green. Add white vanilla baking chips to marshmallow mixture, and stir until melted, microwaving an additional 30 seconds if necessary.

3:  Stir in cereal until evenly coated.

4: Drop 1/3 cup of cereal mixture on waxed paper-lined cookie sheet. Use greased hands to form into wreath shape. Place 4 red cinnamon candies on wreath to decorate. Repeat with remaining cereal mixture and candies. Refrigerate 15 minutes before serving.

Darlene’s Tips:  You can experiment with different types of cereal. Granola cereal might be awesome! You can use red frosting instead of candy for the decoration. You could also use red shoestring licorice to create bows for the wreaths!
