Peanut Butter Acorn Cookies
a General Mills Recipe

INGREDIENTS:

1 roll Pillsbury refrigerated peanut butter cookies dough
8 pretzel sticks, cut into thirds
2/3 cup semisweet chocolate chips
1/2 cup coarsely crushed pretzel sticks

DIRECTIONS:
1: Heat oven to 350°F. With hands, shape roll of cookie dough so it forms a point all along the top and remains rounded at bottom. If dough is too soft to cut, wrap in plastic wrap, and place in freezer 15 minutes.
2: With thin sharp knife, cut dough into 24 slices (about 3/8-inch thick). Place 2 inches apart on ungreased cookie sheet. Place cut pretzel piece at top of each cookie at a slight angle. Bake 9 to 11 minutes or until cookies are set. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely.
3: In small microwavable bowl, microwave chocolate chips uncovered on High 1 to 2 minutes, stirring every 30 seconds, until smooth. Using frosting spatula or knife, spread chocolate on top portion of each cookie to look like acorn shell. Place on waxed paper. Immediately sprinkle crushed pretzels over chocolate. Let chocolate set before serving (place in fridge to set quicker).

Darlene’s Tips: I bet you could just cut the cookies round and then shape each one into an acorn shape. Might be easier and will make them each look a little different just like in nature! You don’t have to add the crushed pretzels if you don’t want. You can see in the image they left some plain. If you don’t want pretzels for the stem, you could use a piece of shoesting black licorice. You could use sugar cookie dough if you don’t want peanut butter. And you could use butterscotch morsels for the acorn caps for a different color acorn.

I am starting a new series for $3+ patrons that I’m quite sure will be a hit! Even if you don’t actually want to use the tips for yourself, you might enjoy watching my progress over the next few weeks. And remember, I tell it like it is! Potty mouth and all.
I am so fucking excited (potty mouth preview for you) about this series that I know for a fact I can make it stick. And even though I’m going to be doing stuff that is not part of my normal schedule (upcoming trip to memphis, upcoming surgery), I’m still going to stick to this new plan.
It’s like I always say, if you think something is worth doing, just start immediately! You can’t wait for a clear path because there are no clear paths. There is always something getting in our way. If you wait until it’s convenient, you’ll never do it.
Just like with food. If you want to change the way you eat, start right now. NOW!!! Not tomorrow. Not after you eat all the current food in the house. Not after Thanksgiving. Not after Christmas. Not next year. NOW!!! If you can’t start now, then give up thinking about it. You don’t really want it. You don’t. And there’s nothing wrong with that. Eat what you want and own it. Then go on your merry way.
What is this new 100 Blocks Per Day series about? Time management! Relieving stress. Getting shit done (procrastination queen here). It’s also about giving ourselves permission to do those things that we might consider selfish acts and learning how to schedule the time to allow for such things.
I hope you join me on this journey! I know this will be life changing for me. Maybe for you too! If not, you might at least find it entertaining to watch my progress. Here is the first video so you can start at the beginning with me.
I plan on making this series last at least 6 weeks which brings us close to the end of the year. I’ll post at least 1 video per week about this topic, maybe more. And if there is still enough interest after that, I can follow up once or twice per month, especially since I’m sure I’ll still be making changes along the way.

Super Easy Homemade Gravy Recipe

INGREDIENTS:

2 tablespoons melted butter or meat drippings (poultry, bacon or other cooked meat)
2 tablespoons all-purpose flour
1/2 cup liquid (turkey or meat juices, broth or water)
1/2 cup milk (whole, 2% milk or use half-and-half)
salt and pepper to taste

DIRECTIONS:
1: Place butter or drippings in a skillet.
2: Stir in flour; cook over medium heat, stirring constantly with whisk and scraping up browned bits, until mixture is light golden brown.
3: Gradually stir in liquid and milk. Heat to boiling over medium heat, stirring constantly with whisk.
4: Boil and stir about 1 minute or until gravy thickens. Stir in salt and pepper. If gravy is too thick, stir in more milk just a bit at a time until desired consistency.

Darlene’s Tips: Yon can add bits of cooked or dried onion to your gravy or chopped mushrooms or whatever you like. Very quick and easy. You can have any flavor gravy any time you need it!
