BLT Pasta Salad Recipe
Please remember that I don’t eat this stuff so I did not test this recipe. I’m just posting so you can try it!
INGREDIENTS:
1 package (7 oz) uncooked rotini pasta (or any shape)
8 slices bacon, cut into 1/2 inch pieces
1 cup mayonnaise or salad dressing
2 teaspoons sugar
1 large tomato, seeded, chopped (1 cup)
4 medium green onions, sliced (1/4 cup)
4 cups thinly shredded iceberg lettuce
Darlene’s Tips: This makes a party size salad. I bet it will be a big hit at the next barbecue you serve it at! You can always adjust to make smaller portions. And if you don’t feel like cooking the bacon, use pre-cooked or you could even toss in a jar of real bacon bits. And you can use sweet onions instead of green onions if you want. Always adjust to your liking. There are no rules with recipes!
DIRECTIONS:
Step 1: Cook pasta as directed on package. Drain; rinse with cold water to cool. Drain well.
Step 2: Meanwhile, in 10-inch skillet, cook bacon over medium heat 8 to 10 minutes, stirring occasionally, until crisp. Drain on paper towels; set aside.
Step 3: In large bowl, stir together mayonnaise and sugar with whisk until smooth. Stir pasta into mayonnaise mixture.
Step 4: Gently stir in bacon, tomato, and green onions. Stir in lettuce just before serving.
