Easy Chicken Parmesan Lasagna Recipe

INGREDIENTS:
2 jars (24 oz each) marinara sauce
12 oven-ready lasagna noodles (or boil your own)
1 container (15 oz) part-skim ricotta cheese
2 cups chopped deli rotisserie chicken (or cook your own)
4 cups shredded mozzarella cheese (two 8-oz packages)
3 tablespoons butter
1 cup bread crumbs (any kind)
1/2 cup grated Parmesan cheese

DIRECTIONS:
1: Heat oven to 350°F. Spray 13×9-inch (3-quart) baking dish with cooking spray.
2: Cover bottom of baking dish with 1 cup of the marinara sauce. Arrange 3 noodles on top of sauce. Top with one-third of the ricotta cheese, one-third of the chicken, 1 cup of the mozzarella cheese and 1 cup of the marinara sauce.
3: Repeat with two additional layers, and top with noodles, remaining sauce and remaining 1 cup mozzarella cheese. Spray sheet of foil with cooking spray; place sprayed side down on baking dish, and seal tightly.
4: Bake 45 minutes. Meanwhile, in small microwavable bowl, melt butter; mix in bread crumbs and Parmesan cheese until mixed well. Remove lasagna from oven, uncover and top with bread crumb mixture. Bake 15 to 20 minutes or until bubbly and bread crumbs are lightly brown. Let stand 10 minutes before serving.
Darlene’s Tips: You can certainly do the same using cooked ground meat, chicken, turkey or beef. And if you love zucchini lasagna, add a layer of thin slices on top of the meat!
