Cake Mix Sugar Cookies Recipe with Galaxy Icing

1 box Betty Crocker Super Moist white cake mix
1/2 cup shortening
1/3 cup butter or margarine, softened
1/2 to 1 teaspoon vanilla, almond or lemon extract
1 egg
Sugar for sprinkling
Vanilla frosting
Food colors

1:  Heat oven to 375°F. In large bowl, beat cake mix, shortening, butter, extract and egg with electric mixer on low speed 30 seconds, then on high speed 1 minute (or just beat the hell out of it by hand, my words, not theirs, lol).

2:  Divide dough into 4 equal parts. Roll each part 1/8 inch thick on lightly floured cloth-covered surface with rolling pin.

3:  Cut with cookie cutters into desired shapes then sprinkle with sugar. Place 2 inches apart on ungreased cookie sheet.

4:  Bake 5 to 7 minutes or until light brown. Cool 1 minute then remove from cookie sheet to cooling rack.

5:  In microwavable bowl, microwave frosting uncovered on High 20 to 30 seconds or until melted.  Stir until smooth and frost cookies.

6:  In small bowls or cups, stir together small amounts of water and food color. Paint colors on freshly frosted cookies, using fine-tip brush, then swirl colors with brush or toothpick to create marbled designs. Dry completely before storing.

Darlene’s Tips: Want to whip up galaxy cookies quickly?  Use store-bought cookies!  You can also use the food coloring swirl method on top of cakes.  Just heat your frosting as mentioned in the descriptions and frost your cake. Then paint with the food color and water mixture and swirl.  You could also add colorful sugar sprinkles for twinkling stars.
