Chocolate Covered Christmas Toffee Recipe – Made with Crackers

INGREDIENTS:

40 Ritz crackers (or any round crackers like Ritz)
1 cup butter (not margarine)
1 cup sugar
3 cups milk chocolate chips
Christmas candy sprinkles

DIRECTIONS:

1: Heat oven to 350°F. Line 15x10x1-inch pan with foil. Spray foil with cooking spray. Place crackers in single layer in pan.

2: In 2-quart saucepan, cook and stir butter and sugar over medium heat until butter is melted. Heat to boiling, stirring frequently. Boil 7 to 9 minutes longer, stirring frequently, until light brown color.

3:  Remove from heat. Immediately pour mixture evenly over crackers in pan and spread to cover. Bake 13 to 15 minutes or until bubbly and brown in color. Remove from oven.

4:  Sprinkle chocolate chips on top of cracker mixture. Let stand 5 minutes. Spread chocolate evenly over cracker mixture.

5:  Sprinkle with candy sprinkles. Cool completely, about 2 hours or until chocolate is set. Break into pieces. Store covered in refrigerator up to 1 week.

Darlene’s Tips: You can try this with any kind of cracker or even cookies. You can use any flavor of candy morsels. You could use white morsels and tint with red and green. You can add chopped nuts to the butter/sugar mixture just before pouring it over the cracker.
