Crispy Baked Cheddar Chicken Recipe

INGREDIENTS:
4 boneless, skinless chicken breasts
2 eggs
2 cups cheddar cheese, shredded
2 cups panko breadcrumbs

DIRECTIONS:

1:  Preheat oven to 400°F. In bowl, whisk eggs until bubbly. In another bowl, combine bread crumbs and cheese.

2:  Cut each breast of chicken into strips. Dip each piece into eggs, then roll in the cheese-bread crumb mixture. Place in a parchment-lined baking dish and cover with foil.

3:  Bake chicken in preheated oven for 25 minutes, then remove foil. Cook 10-12 additional minutes, or until chicken is cooked through and coating is golden brown.

Darlene’s Tips:  I honestly think that a total of 35 minutes is too long. You could try less time, especially if you cut your strips on the thin side. I’d actually like to try this using crushed pork rinds to keep it zc. I don’t really like pork rinds, but I’m sure I’d love them mixed with cheese. Maybe a future concoction video! To crisp up your chicken, you could try spraying with butter flavored cooking spray after uncovering them.  You could do this with nuggets too and just adjust the cooking time. I made my mother baked nuggets the other day (rolled them in baking mix) and cooked for only 15 minutes. They were fully cooked.  Oh, want more cheesy flavor?  Instead of breadcrumbs, try crushing cheese crackers and using that instead! Crush in a bag using a rolling pin.
