Darlene’s Concoctions – Boiled Ham & Potato Croquettes

I made some croquettes for lunch today and I wanted to pass along my “recipe” to you!  Those of you who are familiar with my concoctions know that I do not measure. So, my recipes are really more of an attempt to give you new ideas, new ways to use up your stockpile. I think you have to already know how to cook to follow me… lol!

What I did was boil about a pound or so of boiled ham.  Yes, I boiled boiled ham. I do that to get rid of most of the salt.

I ground the ham in my food processor until is was ground but still a bit chunky.

I made super thick mashed potatoes using instant potatoes and about 1/2 the liquid required.  I wanted them thick so I could easily form patties. I used the “loaded” instant potatoes for more flavor, but you can use plain.

I scrambled 2 eggs with some water in a shallow bowl.

I mixed equal parts (give or take) of regular bread crumbs and panko bread crumbs and I also added a bit of cornstarch for sticking power.

I mixed equal parts (again, give or take) of the ground ham and the mashed potatoes and formed that into patties.  I made super big patties because I quickly get bored making patties.

I put the patties into the egg mixture then into the crumbs. I placed them on a cookie sheet (sprayed with cooking spray) and baked at 350 degrees for 30 minutes.

I took them out and noticed some of the top bread crumbs were still dry, so I gave them a squirt of my butter flavored cooking spray then put them under the broiler for 5 minutes.

PERFECTION!!!

These croquettes are delicious! And what I love about stuff like this is it’s easy to freeze. Just put a coffee filter between each patty so they won’t stick together (then you can separate and thaw only what you need), bag them, then pop them in the freezer!

The other nice thing about croquettes is that you have your meat and potatoes all mixed together for a quick and easy meal! All you have to do is serve with veggies. We had them with spinach, carrots and cauliflower. What an awesome lunch!
