Easiest Ever Lemon Bars Recipe – 5 Ingredient Cookie Dough Hack

Easiest Ever Lemon Bars Recipe

INGREDIENTS:

1 roll (16.5 oz) Pillsbury refrigerated sugar cookies
1/2 cup lemon juice
4 eggs
1/4 cup all-purpose flour
1 1/2 cups powdered sugar

DIRECTIONS:

1:  Heat oven to 350°F.  Break up cookie dough and press evenly in ungreased 9-inch square pan. Bake 15 minutes. Remove from oven to cooling rack and leave in pan.  Let cool at least 10 minutes.

2:  Beat lemon juice, eggs, flour and powdered sugar with whisk in large bowl until well mixed. Pour over partially baked cookie crust.

3:  Bake 20 to 25 minutes longer or until set. Remove from oven to cooling rack. Cool completely, about 1 hour. Sprinkle with additional powdered sugar. Cut into squares and store leftovers in the refrigerator.

Darlene’s Tips: If you want more color, use a drop of yellow food coloring in the topping. You can do the same with lime juice (use green food coloring) instead of lemon.  You could also use a mix of both juices for lemon-lime bars. Need a larger batch?  Double the recipe and bake in a 13×9-inch pan.
