Easy Ravioli Skillet Lasagna Recipe

2 cups Pasta Sauce Cabernet or Marinara
1 package (9 oz) frozen ravioli, meat or cheese
1 container (15 oz) ricotta cheese
1 egg
1/2 cup freshly grated Parmesan cheese, divided
1 package (9 oz) frozen spinach, thawed according to package directions

1: Add sauce and 1/3 cup water to a 10-inch skillet and bring to a boil. Add the frozen ravioli and simmer, covered, over medium heat for 3 minutes.
2: Meanwhile, combine the ricotta, egg and half of the Parmesan cheese in a medium bowl.
3: Arrange thawed spinach on top of the ravioli, and evenly spread the ricotta mixture in a layer on top of the spinach. Reduce heat to low, cover and simmer 10 more minutes.
4: Serve garnished with the rest of the Parmesan cheese.

Darlene’s Tips:  You can skip the spinach if you are not a fan of spinach. If you like zucchini, you could add a layer of thinly sliced zucchini instead or even a layer of mushrooms. Toss some mozzarella on there too if you want. Experiment!
