Gingerbread Pancakes Recipe from Scratch or By Using Pancake Mix

Please remember that I don’t eat this stuff so I did not make this recipe. I’m just posting so you can try it!

INGREDIENTS:
See my tips below for pancake mix method

1 1/3 cups milk
2 eggs
3 tablespoons molasses
2 cups all-purpose flour
1/4 cup packed brown sugar
3 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/4 to 1/2 teaspoon ground ginger

DIRECTIONS:

1:  In large bowl, beat milk, eggs and molasses with whisk until blended. Stir in remaining ingredients just until flour is moistened (batter will be slightly lumpy).

2:  Pour batter by 1/4 cupfuls onto hot griddle. Cook 1 to 2 minutes or until bubbly on top and dry around edges. Turn and cook other side until golden brown. Serve warm.

Darlene’s Tips:  You can make this recipe using your favorite pancake mix. Simply add some molasses and spices to the mix. If you don’t have pumpkin pie spice, just use ginger. No molasses? Just use ginger.  You could also add a bit of the brown sugar for extra sweetness. You do not need exact measurments. Be daring and experiment!
