Copycat Cracker Barrel Hash Brown Casserole

INGREDIENTS

2 pounds frozen hash browns, thawed
1/2 cup butter, melted
1 can (10.75 ounces) cream of chicken soup
2 cups sour cream
1/2 cup chopped onion
2 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
(see my tips below)

DIRECTIONS:

1: Preheat oven to 350° F. Spray 11 x 14 inch casserole or baking dish with cooking spray.

2:  Combine all ingredients in a large bowl and stir to mix. Spread evenly in prepared pan.

3:  Bake for 45 minutes until top is golden brown.

Darlene’s Tips:  You can add up to 1/2 cup to this recipe like fresh diced tomatoes, chopped peppers, chopped black olives, chopped ham or bacon, even leftover cooked rice. Experiment!
