Place cereal in a large bowl and set aside.

Wash the lemon then grate the peeling until you have about 4 teaspoons of grated peelings (does not have to be exact).

Cut the lemon and squeeze until you have 2 tablespoons of juice.

Place the baking chips, lemon peel and juice uncovered in a 1-quart microwavable bowl and microwave on High for 1 minute then stir. Microwave about 30 seconds longer and stir again.

Pour mixture over cereal, stirring until evenly coated.

Pour mixture into 2-gallon resealable food-storage plastic bag.  Add powdered sugar to bag. Seal bag and gently shake until well coated. Spread on waxed paper or foil to cool. Store in airtight container.

Darlene’s Tips: You can use 2 teaspoons (not tablespoons) of lemon extract instead of the 2 tablespoons of lemon juice.  If using extract, you can also skip the grated lemon since the extract is strong in flavor.  You can add other stuff to this mix too, like nuts, coconut, dried fruit, whatever!
