INGREDIENTS:
1 package (16 oz) vanilla-flavored candy coating, chopped () or 16 oz
24 hard peppermint candies or
(see tips below)

DIRECTIONS:
1: Line cookie sheet with waxed paper, foil or cooking parchment paper. Place candy coating in 8-cup microwavable measuring cup or 2-quart microwavable casserole. Microwave uncovered on High 2 to 3 minutes, stirring every 30 seconds, until almost melted. Stir until smooth.
2: Place peppermint candies in heavy plastic bag; crush with rolling pin or bottom of small heavy saucepan. Pour crushed candies into wire strainer. Shake strainer over melted coating until all of the tiniest candy pieces fall into the coating (reserve the larger candy pieces). Stir coating to mix evenly.
3: On cookie sheet, spread coating evenly. Sprinkle evenly with remaining larger candy pieces. Let stand about 1 hour or until cool and hardened. Break into pieces.

Darlene’s Tips: Don’t get caught up in exact measurements. You are basically melting your white coating and mixing it with candy. Make as much or as little as you want. You can experiment with other hard candies too. I think would be awesome!

INGREDIENTS:
1 roll (16.5 oz)
1/4 cup
3/4 cup finely

DIRECTIONS:
1: Heat oven to 350°F. Break up cookie dough in large bowl. Stir or knead in flour and pecans until well blended.
2: Shape dough into 1-inch balls (should get about 54). Place 1 inch apart on ungreased .
3: Bake 10 to 14 minutes or until set but not brown. Remove from cookie sheets. Cool 1 minute on .
4: Roll warm cookies in powdered sugar and place on cooling rack. After fully cooled, roll in powdered sugar again.

Darlene’s Tips: You can use any chopped nuts you like, even chopped mixed nuts. Feel free to add a teaspoon of your . Vanilla is alway a good choice, but rum, peppermint or almond would also be good choices. Feel like experimenting? Try adding a bit of to the powdered sugar for a hint of chocolate flavor. It would also cut down on the sweetness a bit since the cocoa is not sweet. I have not tried this, but I bet it would work.

INGREDIENTS:
1 roll (16.5 oz)
1/4 cup
10 pieces clear
3-inch-ish and 1-inch-ish
(see tips below)

DIRECTIONS:
1: Heat oven to 350°F. Line cookie sheets with cooking parchment paper.
2: Place 2 to 3 candies of the same color in a small plastic bag. Seal bag and gently pound on the candies to crush them. Repeat with remaining candies, using several different colors.
3: In large bowl, break up cookie dough. Mix in flour with spoon or hands, until well blended.
4: On lightly floured work surface, roll dough 1/8 inch thick, using additional flour as needed to prevent sticking. Cut out dough with big cookie cutters. Cut centers of the cookies with small cookie cutters.
5: Place large cutouts 2 inches apart on cookie sheet. Place 1/4 to 1/2 teaspoon crushed candy in center of each cutout cookie, making sure candy touches edges of cookie. Do not mound candy in centers of cookies.
6: Bake 6 to 9 minutes or until edges of cookies are light golden brown and candy is melted and fills center of cookie. Cool about 10 minutes on cookie sheets or until candy is hardened. Remove cookies from cookie sheets to cooling racks. Cool completely, about 15 minutes.
DON’T WASTE THOSE CUT OUT CENTERS! Place the small center cutouts on an ungreased cookie sheet and bake 4 to 6 minutes or until light golden brown. Cool 2 minutes then remove to cooling rack to cool completely.

Darlene’s Tips: For a fun swirly stained-glass look, sprinkle two colors of crushed candies in each cookie. You can also decorate these cookies with and after they are cooled. The little center cookies would look great on top of cupcakes. You could also dip the little cookies into melted or melted then decorate with sprinkles. Have fun and experiment!
