Homemade Vanilla Pudding Recipe

INGREDIENTS:
1/3 cup sugar
2 tablespoons cornstarch
2 cups milk
2 large egg yolks, slightly beaten
2 tablespoons butter, softened (not margarine)
2 teaspoons vanilla extract
(see my tips below)

DIRECTIONS:

1:  Mix sugar, cornstarch and salt in a saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.

2:  Pour about half of the hot mixture into the bowl of slightly beaten egg yolks, then pour the egg mixture back into the saucepan and mix. Boil and stir 1 minute then remove from heat. Stir in butter and vanilla.

3:  Pour pudding into dessert dishes. Cover and refrigerate about 1 hour or until chilled. Store covered in refrigerator.

Darlene’s Tips:  You can add any flavor of extract that you like.  For chocolate pudding, increase sugar to 1/2 cup, add 1/3 cup unsweetened cocoa powder into sugar mixture and leave out the butter.  For butterscotch pudding, make like vanilla but use brown sugar instead of white.

2-Ingredient Cream Cheese Chili Dip Recipe – Mega Easy!

INGREDIENTS:
1 (8 ounce) block of cream cheese, softened
1 (15 ounce) can of chili of your choice (or use leftover homemade chili)
(see my tips below)

DIRECTIONS:

1:  Mix both ingredients in a pot and heat on the stove until warm. You can also mix and heat in the microwave for 1 to 2 minutes if you prefer.

Darlene’s Tips:  Serve with chips of your choice or veggies or both!  For a more cheesy dip, use 4 ounces of cream cheese and add 4 ounces of velveta cheese.  Or you can skip the cream cheese and just do 8 oz velveta with the chili.  Add whatever you like to the mix too, like some rinsed canned black beans, some canned/jarred jalapeno peppers or chilis, some finely chopped sweet onion, whatever!

3-Ingredient Peanut Butter Fudge Recipe – Melt and Pour Method

INGREDIENTS:

3 cups white vanilla baking chips
1 can (14.5 oz) sweetened condensed milk (not evaporated)
1/2 cup peanut butter (not natural)
(see my tips below)

DIRECTIONS:

1:  Line 8-inch square pan with foil and spray with cooking spray.

2:  Place the ingredients in a large microwavable bowl. Microwave uncovered on High in 1-minute increments, stirring well between each, until melted and smooth. This may take several minutes.

3:  Spread immediately in pan. Let stand at least 2 hours to set before cutting or refrigerate to speed up setting process.

Darlene’s Tips: You could experiment and try this with peanut butter morsels. You could also add some chocolate morsels on top after pouring into the pan (push then down a bit). Use chunky peanut butter if you want some nuts or add chopped peanuts or nuts of your choice. And try this… refrigerate cut pieces of fudge and dip the tops into melted chocolate (or melted morsels of your choice)!  You can keep this fudge refrigerated if it gets too soft. You can also freeze it.

Deep Dish Blueberry Pie Recipe

INGREDIENTS:
1 box Pillsbury refrigerated pie crusts, softened as directed on box
12 oz cream cheese, softened
1/2 cup sugar and 1/4 cup sugar
1 egg
4 cups fresh blueberries
1 tablespoon all-purpose flour
optional: about 2 teaspoons milk and extra sugar

DIRECTIONS:

1:  Heat oven to 350°F. Unroll 1 pie crust in 9-inch springform pan and press in bottom and up side of pan.

2:  In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in 1/2 cup of the sugar. Decrease speed to low and beat in egg, blending just until smooth. Pour into crust-lined pan.

3:  Toss blueberries with 1/4 cup of the sugar and the flour. Spoon on top of cream cheese mixture. Top with second crust and trim any excess crust. Pinch crusts to seal, turn crust under, and flute. Cut slits in several places in top crust. If desired, brush top crust with milk and sprinkle sugar.

4:  Place foil or cookie sheet on oven rack below middle rack to catch any spillover. Place pie on middle oven rack and bake 45 to 50 minutes or until crust is golden brown and filling is bubbly. Cool 1 hour. Refrigerate about 4 hours or until completely chilled before serving. Cover and refrigerate any remaining pie.

Darlene’s Tips:  You could try this with other fresh berries or fruit or a mix! You can also add some chopped nuts or shredded coconut for a tropical twist.

My Top 10 Highest Earning Videos for Last Week (4/27/20 – 5/3/20)

Below is a list of my Top 10 highest earning videos for the week of 4/27/20 – 5/3/20.  If you have not seen these videos, now is a great time to binge watch!

I have changed this Top 10 list to Highest Earning videos instead of Most Viewed. The two do not go hand in hand so the list might have more of a variety now. It will be interesting for me to see if any older videos make this top 10.

I think it’s better to judge future content by what is earning the best, not necessarily by what has the most views. This list will be more helpful for me and I hope somewhat inspiring for other creators out there.

Please remember, I’m a tiny creator in the youtube world. My earnings are a drop in the bucket compared to many. I’m very grateful to be able to earn anything from my videos.

April was not a great month for me.  It started out very low but I managed to stick a couple of high performing videos in the last two weeks that helped me out a lot. 

May started out on a very good note. In fact, I had my highest single earning day ever on May 3… $251.42!  Before that, my highest single earning day was $182.23 back in February.  I’ve been anxious to hit my first $200 day since then, but when I finally hit it, I was over $250! Next stop is $300. I love mini goals like this.
