INGREDIENTS:
6 slices sandwich bread
6 slices American cheese
2 tablespoon butter (see my tips below)
optional: tomato soup for dipping
DIRECTIONS:
1: Lay out pieces of sandwich bread on a flat surface. Use a rolling pin to flatten. Then, if desired, use a knife to cut the crusts off of each piece of flattened bread.
2: Place a slice of cheese on top of each slice of bread and roll up tightly.
3: Heat 2 tablespoons butter in a skillet over medium heat until melted. Place the grilled cheese rolls (about 3 at a time) seam-side down in the skillet. Cook on all sides until the bread is toasted and the cheese is melted. You can press the rolls down with a spatula to be sure that they do not unfold while cooking.
4: Remove and repeat with the remaining sandwiches, adding more melted butter if necessary. Serve with tomato soup for dipping!

Darlene’s Tips: If you don’t have margarine you can use mayonnaise. Simply spread some mayo on each roll. Margarine can make the bread wet, so don’t use that. Cooking spray works too. Use any cheese you like and any bread as long as it’s super fresh so it flattens nicely. You don’t have to use an entire slice of cheese per sandwich. Half a slice should be cheesy enough. You can add a strip of sandwich meat to the roll too. Dip in any soup or some warm pasta sauce. You can serve as a side in any meal. The kids will love these!

Below is a list of my Top 10 most viewed videos for the week of 4/20/20 – 4/26/20. If you have not seen them all, now is a great time to binge watch!
April started to pick up for me a bit during the final 2 weeks, but not enough to dig me out of a deep hole. The earnings are only updated through the 28th at the time of this post, so not sure what my total for April will be, but for sure it will be much lower than March. I can live with that. Maybe May will be better!
Super excited to see that I had 3 Episodes of the Crumb Quilt Adventure in the Top 10 last week. That’s amazing considering that series is over 2 years old! And Episode 4 gets an honorable mention because it came in at 11th place. Super cool! Note to self: I need to put mid-roll ads on those suckers!

INGREDIENTS:
1 box (6 oz) Mac & Cheese (regular or shells)
plus ingredients called for on the box of mac & cheese
4 slices bacon, crisply cooked and crumbled
1 medium avocado, pitted, peeled and cubed
optional: 1 tablespoon chopped fresh cilantro or basil
DIRECTIONS:
1: In 2-quart saucepan, make mac & cheese as directed on the box.
2: Stir in bacon. Cook 2 to 3 minutes longer, stirring occasionally, until heated through.
3: Gently stir in avocado. Sprinkle top with cilantro or basil if desired and serve.

Darlene’s Tips: You can add some diced fresh tomato to this, maybe half a cup or so, along with the bacon to heat it a bit, or just add as a topping. You can also add chopped onion or peppers or whatever you like. A dollop of sour cream on top would be awesome!

INGREDIENTS:
1 can (8 oz) Pillsbury refrigerated crescent dough sheet
2 packages (8 oz each) cream cheese, softened
1/2 cup granulated sugar
2 eggs
1 can (20 oz) pineapple tidbits in juice, drained and juice reserved
optional toppings (see tips below): whipped topping, caramel topping, extra pineapple chunks, cherry, coconut, candy morsels, sprinkles, whatever you want!
(see my tips below)
DIRECTIONS:
1: Heat oven to 375°F. Spray bottom only of 13×9-inch pan with cooking spray. Unroll dough sheet, and press in bottom of pan. Bake 11 to 13 minutes or until light golden brown and baked through. Remove from oven to cooling rack and cool 10 minutes. Reduce oven temperature to 325°F.
2: In medium bowl, beat cream cheese and granulated sugar with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Add eggs, 1 at a time, beating until just blended. Add 1/3 cup of the reserved pineapple juice to cream cheese mixture and beat until mixed well. Finely chop 1/2 cup of the pineapple tidbits, and stir into cream cheese mixture.
3: Spread filling evenly over baked crust. Bake 25 to 30 minutes or until filling is set. Cool 30 minutes on cooling rack. Refrigerate about 1 hour or until cooled completely.

Darlene’s Tips: You can set up a toppings bar and let everyone add whatever topping they want. Fun! You can also use pie crusts, does not have to be crescent. Just press the pie crusts in the pan to fit or you might be able to make two 9″ pies.

I just got this picture of pure loveliness from my fabric supplier. I ordered 5 yard cuts of every print he has! This should be a huge shipment. I also ordered 50 more yards of muslin. Not sure if that will come with it or separately. All I know is.. we’ll have batik soon!

INGREDIENTS:
1 1/2 cups cooked rice (or one )
1 bag (12 oz) frozen whole kernel sweet corn
1 can (15 oz) black beans, drained and rinsed
1 package (1 oz) taco seasoning mix
1 can (10 oz) mild enchilada sauce
2 cups finely shredded Mexican cheese blend (8 oz)
1 box (20 oz) frozen beef taquitos (like this)
optional toppings: cilantro, jalapeno peppers, green onions, tomatoes, sour cream, pico, guac, black olives, salsa, etc.
(see my tips below)
DIRECTIONS:
1: Heat oven to 375°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray.
2: In large bowl, stir cooked rice, frozen corn, beans, taco seasoning mix, enchilada sauce and 1 1/2 cups of the cheese until well blended. Transfer to baking dish.
3: Top mixture with taquitos. Bake for 35 minutes then top with remaining ½ cup cheese and bake for an additional 5 to 10 minutes until cheese is melted and taquitos are heated through. Top with optional ingredients of your choice.

Darlene’s Tips: This is a good way to use up leftover rice! If you dont’ have rice, you can just skip that ingredient. You can toss in any ingredients you like. You can use pinto beans instead of black beans or use a mix of both.
