Baked Cheddar Cracker Chicken Tenders Recipe – Just 4 Ingedients

INGREDIENTS:
1 pound boneless skinless chicken breast
2 cups cheddar crackers, coarsely crushed (like Annie’s, Goldfish, Cheez-It, etc)
2 eggs
2 tablespoons melted butter

DIRECTIONS:

1: Heat oven to 425°F. Spray 15 x 10 x 1 inch pan with cooking spray.

2: Beat eggs in a shallow dish or pie plate. Place cracker crumbs in another shallow dish or pie plate.

3: Cut chicken breast into strips. Dip each strip into eggs then coat with cracker crumbs and place in pan. Drizzle with melted butter.

4: Bake 12 to 18 minutes or until chicken is no longer pink in center (165°F). Serve with your favorite dipping sauce.

Darlene’s Tips:  Place the crackers in a plastic bag and use a rolling pin or mallet to crush them. You could also cut the chicken into nuggets. Want them spicy? Add some cayenne pepper to the crackers!

Root Beer Pulled Pork – Easy 3 Ingredient Slow Cooker Recipe

INGREDIENTS:
1 (2 lb) pork tenderloin (pork shoulder or butt can also be used)
1 can (12 oz) root beer (not with artificial sugar)
1 bottle (18 oz) barbecue sauce of your choice

DIRECTIONS:

1:  Place the pork tenderloin in a slow cooker and pour the can of root beer over the meat. Cover and cook on low for 6 hours or until pork shreds easily with a fork.

2:  Remove cooked pork to cutting board. Drain and discard the root beer.

3:  Shred pork and return it to the slow cooker. Pour the barbecue sauce over the pork and stir to combine. Serve immediately or keep warm in slow cooker until ready to serve.

Darlene’s Tips:  Serve on hamburger buns, in hot dog rolls or as a side to baked beans or rice. Also great with potato or pasta salad.  You could also try this with other flavors of soda like Dr. Pepper, Cherry Coke, whatever!  You don’t have to add the barbeque sauce. You can put pork back in the slow cooker with the leftover soda juice and leave it at that.  You can have bbq sauce on the side if anyone wants some.

Look!  My Narrow Fabric Scraps video got the top spot again!  It was #1 for 9 weeks in a row but See What I Made with these Fabric Scraps ended its winning streak last week.  Seems like the Narrow Fabric Scraps video did not like dropping down to 2nd place last week so it climbed back up to the top!  But the See What I Made video is still up there!  I’m curious to see what happens next week.

Lemonade Poke Cake Recipe

INGREDIENTS:
1 box Betty Crocker Super Moist lemon or yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
1 can (6 oz) frozen lemonade concentrate, thawed
3/4 cup powdered sugar
frosting of your choice or whipped topping

DIRECTIONS:

1: Heat oven to 350°F (325°F for dark or nonstick pan). Make cake as directed on box for 13×9-inch pan. Cool 15 minutes.

2: Mix lemonade concentrate and powdered sugar. Pierce top of warm cake every 1/2 inch with long-tined fork, wiping fork occasionally to reduce sticking.

3:  Drizzle lemonade mixture evenly over top of cake. Run knife around sides of pan to loosen cake. Cover and refrigerate about 2 hours or until chilled.

4: Frost as desired or serve topped with whipped topping.

Darlene’s Tips:  If traveling with the cake, you can bring a tub of whipped topping and just add a dollop to individual servings. You can also sprinkle with yellow decorator sugar or any yellow sprinkles. Serve with lemon sherbet and ice cold lemonade!

2-Ingredient Butterscotch Fudge Recipe

INGREDIENTS:
2 1/2 cups butterscotch morsels (, use any brand)
1 can (14 oz) sweetened condensed milk (, use any brand)

DIRECTIONS:

1:  Line 8-inch square baking dish with waxed paper or cooking parchment paper.

2: In 2-quart saucepan, heat 2 1/2 cups butterscotch chips and 1 can (14 oz) sweetened condensed milk (NOT evaporated milk) over medium heat, stirring occasionally, until melted.

3: Remove from heat. Spread in baking dish and refrigerate about 4 hours or overnight. Cut as desired.

Darlene’s Tips:  We always just poured fudge out onto a large buttered plate or plates. Go ahead and try that if you want. If you want perfect squares, then use a baking dish as directed. You can try this recipe with any flavor morsels. Add chopped nuts if you want.  This type of fudge might be fairly soft, so you can keep in the fridge to keep it more firm. You can also freeze and serve as a frozen treat. It should still be fairly soft. If not, it will soften in just a few minutes.  Want to try something? Pour it over a pan of baked brownies before you cut them.  I bet that would work!

Cheesy Mice Rag Quilt Tutorial – Episode 1

I have a new Rag Quilt design for you!  I am using one of my Cheesy Quilt panels in this quilt (for the A blocks) but you don’t have to. You can use whatever fabric you want and you can still follow the general design.

I will have the panels or a quilt kit available soon, hopefully by Episode 2.

Below are all the sizes of the blocks for my design.
Each square on the grid is one inch
The black lines are where we will be snipping to rag the quilt
The cut sizes below allow for 3/4 inch seam allowances on all sides
All measurements are in inches and are listed “wide” x “tall”
Finished quilt will be about 36 inches wide by 45 inches tall

Block A – 13.5 x 14.5 – Cut 6 total, 3 for the front, 3 for the back.

Block B – 10.5 x 14.5 – Cut 12 total, 6 for the front, 6 for the back.

Block C – 4.5 x 40.5 – Cut 4 total, 2 for the front, 2 for the back.

Block D – 37.5 x 4.5 – Cut 4 total, 2 for the front, 2 for the back.
