Nutella Cookie Butter Cups Recipe

INGREDIENTS:

1/2 cup powdered sugar
1/2 cup cookie butter ()
1 lb milk chocolate almond bark (or morsels)
1/4 cup Nutella

DIRECTIONS:
1: Combine powdered sugar and cookie butter until fully incorporated.
2: Using a teaspoon, measure out cookie butter mixture and roll into balls. Flatten the tops a little if desired.
3: Melt chocolate almond bark according to package instructions. Mix Nutella into the melted chocolate. Stir until smooth.
4: Line mini muffin tins with mini paper cups. Add a teaspoon of the chocolate mixture to each cup.
5: Place a cookie butter ball in each cup.
6: Fill the cups with the chocolate mixture.
7: Place muffin tins in the refrigerator for 30 minutes or until set.
Darlene’s Tips: You can use peanut butter instead of the cookie butter if you prefer. I actually saw cookie butter and hazelnut spread (knock off nutella) in small jars in my dollar tree so check there for those ingredients. You could add chopped nuts to the mix and also sprinkle chopped nuts on the top before the chocolate sets.

Easy Homemade Shortbread Cookies

INGREDIENTS:

1 cup butter, softened
3/4 cup powdered sugar
2 1/2 cups all-purpose flour

DIRECTIONS:
1: Heat oven to 350° F. In large bowl, beat butter and powdered sugar with spoon. Stir in flour. (If dough is crumbly, mix in 1 to 2 tablespoons butter or margarine, softened.)
2: Roll dough 1/2 inch thick on lightly floured surface. Cut into small shapes by hand or use cookie cutters. Place 1/2 inch apart on ungreased cookie sheet.
3: Bake 14 to 16 minutes or until set and bottoms are light golden brown. Immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
Darlene’s Tips: You can add some finely chopped nuts, maybe 1/4 cup. Pecans are a great option, especially if you love ! These cookies can be dipped in melted chocolate or any flavor of melted candy morsels. Or you can drizzle the melted morsels on the cookies. Add a drop of food coloring for pastel shortbread cookies. If you don’t want to roll the dough, make sloppy shortbread cookies by just taking a small ball of dough and pressing it flat with your fingers. Any odd shape is fine!

Retro Strawberry Pie Recipe

INGREDIENTS:

1 10-inch pie crust, pre-baked
1 box (3 oz) strawberry Jell-O
2 cups sliced strawberries
1 cup sugar
1 1/2 cups water
3 tablespoons cornstarch

DIRECTIONS:
1: Line the bottom of a pre-baked pie crust with sliced strawberries.
2: Combine cornstarch, sugar and water in small saucepan. Bring to a boil and simmer, stirring constantly, until thickened. Add the Jell-O and stir until dissolved.
3: Pour gelatin mixture over strawberries and refrigerate until set.
Darlene’s Tips: You can use any flavor gelatin that you want and experiment with different fruit or berries. If you don’t have a crust, just pour into any casserole dish or even a cake pan. Just scoop out to eat.

Cookie Dip Recipe

INGREDIENTS:

4 oz cream cheese, softened (from 8-oz package)
1/3 cup creamy peanut butter
1 container (6 oz) vanilla yogurt
1/2 cup powdered sugar
1/4 cup chocolate chips

DIRECTIONS:
1: Beat cream cheese and peanut butter in a small bowl with electric mixer on low speed until smooth and creamy. If beating by hand, let cream cheese sit to room tempurature before mixing to make it smoother (chunks are allowed).
2: Beat (or mix in) in yogurt and powdered sugar until blended. Stir in chocolate chips. Garnish with additional chocolate chips when serving if desired.
Darlene’s Tips: Try other stir-ins like candy-coated chocolate or peanut butter pieces, toffee bits or chopped peanuts. Serve this dip with any type of cookies or use to frost cupcakes or brownies. You could try a chocolate version by using nutella instead of peanut butter. You can swap out yogurt flavors too. Try making cookie sandwiches by spreading between any soft cookies or grahams. Want a frozen treat? Freeze them!
