Pina Colada Poke Cake Recipe

INGREDIENTS:

CAKE
1 box Betty Crocker Super Moist white cake mix
1/3 cup vegetable oil
3 eggs
1 can (8 oz) pineapple chunks

FILLING
1 box (4-serving size) coconut cream instant pudding & pie filling mix
2 cups milk

TOPPING
Whipped topping
optional: shredded coconut

DIRECTIONS:

1:  Heat oven to 350°F. Spray bottom of 15x10x1-inch pan with cooking spray.

2:  Drain pineapple juice into a bowl and refrigerat the pineapple chunks for later.  Transfer juice to a 2 cup measureing cup and add water to equal 1+1/4 cups liquid.

3:  In large bowl, beat cake mix, pineapple liquid, oil and eggs with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes.

4:  With handle of wooden spoon (1/4- to 1/2-inch in diameter), poke holes almost to bottom of cake every 1/2 inch, wiping spoon handle occasionally to reduce sticking.

5:  In medium bowl, beat pudding mix and milk with whisk 45 to 60 seconds or until slightly thickened but still pourable. Carefully pour over cake, spreading evenly over surface. Work back and forth to fill holes, tapping pan lightly on counter several times. Refrigerate 2 hours.

6:  Spread whipped topping over top of cake. Cut pineapple chunks into smaller pieces and sprinkle them over the top. Also sprinkle on the shredded coconut if desires. Cover and refrigerate any remaining cake.

Darlene’s Tips:  This would be delish served with coconut sherbet or pineapple sherbet!  You could also add a bit of rum extract to the cake mix. Flavored whipped topping is awesome too! Add a few drops of any extra to your whipped topping and also add a heaping teaspoonful of granulated sugar and mix. Totally different texture and flavor. Experiment!

Incredibly Easy Coconut Dump Pie Recipe

INGREDIENTS:

1 cup shredded coconut
3/4 cup sugar
1/2 cup Original Bisquick mix
1/4 cup butter, softened
2 cups milk
4 eggs

DIRECTIONS:

1:  Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.

2:  Stir all ingredients in medium bowl until blended. Pour into pie plate.

3:  Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.

Darlene’s Tips:  I bet you could double this recipe and pour into a large rectangle casserole dish or cake pan to bring to a potluck dinner!

Pumpkin Pudding Dump Cake Recipe – Only 4 Store Bought Ingredients

Pumpkin Pudding Dump Cake Recipe

INGREDIENTS:

1 box (4-serving size) vanilla instant pudding & pie filling mix
1 can (12 oz) evaporated milk
1 box Betty Crocker spice cake mix or yellow cake mix (your choice)
1/2 cup pumpkin (not pumpkin pie mix), from 15-oz can

DIRECTIONS:

1:  Heat oven to 350°F. Spray bottom and sides of 13×9-inch pan with cooking spray.

2:  In large bowl, beat pudding mix and milk with whisk about 2 minutes or until thickened. Stir in cake mix and pumpkin until well mixed. Spread batter evenly in pan (mixture will be thick).

3:  Bake 30 to 35 minutes or until toothpick inserted in center of cake comes out almost clean. Cool at least 15 minutes before serving.

Darlene’s Tips:  Frost this any way you want. Cream cheese frosting would be delish! Or make a simple glaze by adding a few drops of water or milk at a time to powdered sugar until you get the consistency  you want. You can also add chopped nuts to the cake batter. Some butterscotch morsels might be awesome too!
