Luscious Orange Creamsicle Cookie Crust Pie Recipe
a General Mills Recipe

Check out this huge selection of Betty Crocker Cookbooks!

INGREDIENTS:
Cookie Base

1 pouch (17.5 oz) Betty Crocker sugar cookie mix
Butter and egg called for on cookie mix pouch for drop cookies
1/3 cup butter, melted
Filling
2 boxes (3 oz each) Jell-O orange-flavored gelatin
1/3 cup boiling water
2 boxes (3.4 oz each) Jell-O vanilla-flavor instant pudding & pie filling mix
2 1/2 cups cold milk
1 package (8 oz) cream cheese, softened
1 cup powdered sugar
1 container (12 oz) Cool Whip frozen whipped topping, thawed
Decoration (optional)
1/2 cup canned mandarin orange segments, drained (see my tips)

See my Darlene’s Concoctions videos here!

DIRECTIONS:
1:  Heat oven to 375°F. Make and bake drop cookies as directed on pouch. Cool completely, about 30 minutes.

2:  In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13×9-inch (3-quart) glass baking dish, press cookie crumb mixture firmly in bottom. Set aside.

3:  In small bowl, place gelatin, and add boiling water; beat with whisk until blended. Stir occasionally about 2 minutes or until mostly dissolved. In medium bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in dissolved gelatin. Let stand 5 minutes, stirring occasionally.

4:  In large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust.

5:  Pour pudding mixture over cream cheese layer; spread evenly over top. Drop remaining whipped topping by spoonfuls over pudding layer; carefully spread until even. Refrigerate 5 hours.

6: When ready to serve, sprinkle orange segments on top (optional). Cut into 6 rows by 3 rows. Cover and refrigerate any remaining pieces.

Darlene’s Tips:  You could pretty much do this with store-bought cookies. Just process them to crumbs, add the butter and press into the pan. Soft cookies might work better and might not even need the butter to make the crumbs stick. Add chopped nuts to the crust if you want. Instead of decorating with canned mandarin segments, you can use fresh. Or top with candy orange slices, which happens to be one of my mother’s favorite candies (you see me buy those often at walmart). You can experiment with different flavors of gelatin and pudding mixes.

In-N-Out Double Cheeseburger Copycat Recipe
a General Mills Recipe

Check out this huge selection of Betty Crocker Cookbooks!

INGREDIENTS:
check for ingredient coupons here
Burger
1 lb ground beef, split into 4-oz. patties
Burger buns
Fresh tomato
Fresh lettuce
White onion, sliced thin
American cheese (real, not processed cheese food)
Oil for cooking
Salt and pepper
Burger Sauce
1/4 cup mayonnaise
2 tablespoon ketchup
1 tablespoon sweet pickle relish
Dash of Worcestershire sauce

See my Darlene’s Concoctions videos here!

DIRECTIONS:
1:  Whisk the sauce ingredients for the burger sauce together and store in the fridge until needed.

2:  Divide ground beef into 4 thin patties (4 oz. each). They should be thin, so they cook quickly.

3:  In a large skillet or on a griddle over medium-high heat, add a drizzle of oil and add the beef patties. Press down on patties gently so they form a crust on the bottom. Cook for about 3 minutes. Season patties with salt and pepper.

4:  Flip patties and cook for another 2-3 minutes to finish cooking patties. Top each patty with American cheese.

5:  To assemble burgers, toast the buns and smear a big spoonful of burger sauce on the bottom bun. Top with tomato, lettuce, one cheese slice, a slice of onion, a second patty, and the bun topper.

Darlene’s Tips:  Wrap up the burger in wax paper or parchment paper to help prevent dripping. Who the hell can eat a burger that tall??? You can serve with fries or onion rings. Pretty sure you know that already. lol Enjoy! Want a carnivore version of this burger?  Skip all the ingredients except the burger patties! And eat at least 4 of those suckers! lol My kind of meal!
