Wicked Easy 2-Ingredient Butterscotch Fudge Recipe

INGREDIENTS:
2 1/2 cups butterscotch morsels (, use any brand)
1 can (14 oz) sweetened condensed milk (, use any brand)

DIRECTIONS:

1: Line 8-inch square (2-quart) glass baking dish with waxed paper or cooking parchment paper.

2: In 2-quart saucepan, heat 2 1/2 cups butterscotch chips and 1 can (14 oz) sweetened condensed milk (NOT evaporated milk) over medium heat, stirring occasionally, until melted.

3: Remove from heat. Spread in baking dish and refrigerate about 4 hours or overnight. Cut as desired.

Darlene’s Tips:  We always just poured fudge out onto a large buttered plate. Go ahead and try that if you want.  Or if you’re afraid it will run over the edge, you can use a cookie sheet with sides. If you want perfect squares, then use a baking dish as directed. You can try this recipe with any flavor morsels!  Add chopped nuts if you want. I’d like to make this for my mother and also add coconut. Might be a future concoction!  This type of fudge might be fairly soft, so you can keep in the fridge to keep it more firm. You can also freeze for later.

Cheesey Chicken Tortilla Lasagna Recipe

INGREDIENTS:
2 cups shredded cooked chicken
1 bag (24 oz) frozen corn
1 1/2 cups salsa (any variety)
1 cup sour cream
1 can (4.5 oz) chopped green chiles
12 corn tortillas (6 inch)
1 1/2 cups shredded Monterey Jack cheese (6 oz)

DIRECTIONS:

1:  Heat oven to 375°F. Cook frozen corn as directed on bag, using minimum cook time. In large bowl, mix corn, chicken, salsa, sour cream and chiles.

2:  Spray 13×9-inch (3-quart) glass baking dish with cooking spray. Arrange 6 tortillas on bottom and up sides of dish, overlapping slightly. Top with half of the chicken mixture. Continue layering, ending with chicken mixture. Top with cheese.

3:  Bake 30 to 40 minutes or until cheese is melted and mixture is hot. Let stand 5 minutes before cutting into squares.

Darlene’s Tips:  You can add other ingredients to this lasagna, like some canned pinto beans and/or black beans (rinsed and drained), chunks of cut up fresh tomato, black olives, whatever! You could also try adding a layer of ricotta cheese which I think would be delish!  This is great served with a side of your favorite and/or a tossed salad.
