INGREDIENTS:

1 box Betty Crocker Super Moist lemon or yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
1 can (6 oz) frozen lemonade concentrate, thawed
3/4 cup powdered sugar
frosting of your choice or whipped topping

DIRECTIONS:

1: Heat oven to 350°F (325°F for dark or nonstick pan). Make cake as directed on box for 13×9-inch pan. Cool 15 minutes.

2: Mix lemonade concentrate and powdered sugar. Pierce top of warm cake every 1/2 inch with long-tined fork, wiping fork occasionally to reduce sticking.

3:  Drizzle lemonade mixture evenly over top of cake. Run knife around sides of pan to loosen cake. Cover and refrigerate about 2 hours or until chilled.  Frost as desired or serve topped with whipped topping.

Darlene’s Tips:  If traveling with the cake, you can bring a tub of whipped topping and just add a dollop to individual servings. You can also sprinkle with yellow decorator sugar or any yellow sprinkles. Serve with lemon sherbet and ice-cold lemonade!

Easy Copycat IKEA Swedish Meatballs Recipe

INGREDIENTS:

2 lbs frozen fully cooked meatballs of your choice
1 teaspoon allspice
2 tablespoons butter
3 tablespoons flour
1 1/4 cups beef broth
1/4 cup sour cream
1 tablespoon minced parsley
(see my tips below)

DIRECTIONS:

1:  Toss frozen meatballs with allspice and place on rimmed baking sheet. Cook meatballs in oven according to package directions.

2:  While meatballs are cooking, prepare gravy. Melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute, stirring constantly. Whisk in beef broth and continue cooking, whisking constantly, until thickened, about 5 minutes. Remove from heat and stir in sour cream.

3:  Spoon gravy over cooked meatballs and top with parsley.

Darlene’s Tips:  Use homemade meatballs if you prefer.  You can absolutely skip the parsley. You could make extra sauce and serve over any cooked noodles or rice!

Quick Chicken Quesadillas Recipe

INGREDIENTS:

6 oz to 10 oz leftover cooked chicken
1/2 cup salsa of your choice
8 flour tortillas for burritos (8 inch)
2 cups finely shredded cheese of your choice
Cooking spray

DIRECTIONS:

1:  Cut chicken into bite-size pieces or shred. Mix chicken with salsa in a small bowl.

2:  Spray 1 side of 1 tortilla with cooking spray then place sprayed side down on work surface. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla and spray top of tortilla with cooking spray.

3:  Cook in 10-inch nonstick skillet over medium heat 4 to 6 minutes, carefully turning after 2 minutes, until golden brown. Repeat with remaining tortillas, chicken mixture and cheese. To serve, cut quesadillas into wedges.

Darlene’s Tips:  You can use more or less of the ingredients. You can also add whatever you like to the mix. Serve with sour cream and or guacamole and a side of !
