NOTE: I get messages asking me why I post these types of recipes while I’m following a zero carb animal kingdom only food plan. My answer is because I’m following ZC, but I bet you’re not! Just because I eat a certain way does not mean I have to limit myself to sharing only meat recipes. I’m not the carb police! lol Be sure you check out what I eat everyday!!! Cake Batter Pancakes Recipe INGREDIENTS: 1 1/4 cups all-purpose flour Darlene’s Tip: You can buy any brand cake you want and in any flavor. And remember, you can freeze these and serve later. Make them toaster size and pop them in the toaster to heat. Or heat for a few seconds in the microwave. You can also heat in a pan on the stove top if you want. DIRECTIONS: Step 1: Combine flour, cake mix, sugar and baking powder in a bowl and mix. Step 2: Add 1 cup of milk and eggs. Stir until smooth. Add additional milk until batter has the consistency of pancake batter (different cake mixes may require more or less liquid). You can also add more cake mix if you want your pancakes to have a stronger cake batter flavor. Step 3: Preheat a skillet to low to medium heat. Pour batter in 1/4 cup measurements onto skillet and let cook until bubbles form on top, about 2-3 minutes. Flip and cook for 1 minute more. Serve with glaze if desired (for simple glaze, just mix confectioner’s sugar with a few drops of water or milk and stir then add more liquid as needed, just a drop at a time). You could also serve with pancake syrup or flavored syrups like chocolate, strawberry, caramel, etc. You might also want to top with whipped cream or ice cream. Just have fun with it! I don’t really care for football. I never really understood it. But I’ll be watching most of the Super Bowl because I like the hoopla that surrounds it. And I’ll be rooting for the Pats, ’cause I’m from New England and all. For sure, I will be watching Half Time. I never miss that. Not really fond of Lady Gaga, but it seems she has invited Tony Bennett on stage and I love him! Super Bowl 51 – Sunday 2/5/16, 6:30pm on FOX (tv guide listing) I will also be watching Puppy Bowl! Animal Planet is all about puppies and Puppy Bowl, practically all day today! But the official Puppy Bowl starts at 3pm with a Pregame at 2pm. If you have never watched Puppy Bowl, you simply must! Eat Meat! Drink Water! Get Rest! Yesterday – Saturday 2/4- Day 80 When I got up, I had my usual cup of hot water. At 2:30pm, I ate that mess that you see above. I cooked some fresh haddock in butter, the all the rest was leftover for the past two days. It consisted of chicken, hot sausage, steak, sliced beef, ground beef and bacon ends. I ate all the fish and all the steak (still so tender!!!) then almost all of the other leftovers. What I didn’t eat, I tossed out this time because they were leftovers and I didn’t want to put them back in the fridge. Leftovers only get recycled once! lol At 9:00pm, I cooked up some sliced beef along with bacon ends and ground beef. I ate a big plateful! Food that entered my mouth yesterday: haddock, chicken, hot sausage, steak, sliced beef, ground beef, bacon ends, butter, salt, pepper, and lots of delicious water. If you think this is unhealthy, know I’m not as concerned with physical health. I’m more concerned with my mental health. I’m on a mission to feel better mentally… without cravings!!! I’m willing to test this so you don’t have to! But what works for me might not work for you. I’m not doing this to lose weight. I’m doing this because I’m convinced that I’m overly sensitive to carbs and that I must stay away from them if there is any chance of me feeling better. I’m eating from the animal kingdom only, like the complete opposite of vegan. I know this upsets many, but I promise I won’t eat your pets. You are free to follow my progress/failures and you can even disagree with what I do. Just remember that I will get the last word because it’s my blog, my channel, my life! That’s the new me talking! Happy Sunday! I had a super busy day yesterday. I knocked out 3 videos! First, I explained why this batch of beads that I have on eBay is the last time you can get such a great deal on my beads, lol. Then I let you know that my quilted tote bag is listed on ebay. And last bur not least, I did my first Storytime video and told you about that time I went out with a fireman! lol And today is Super Bowl Sunday! That really means nothing to me, but I will be rooting for the Pats simply because Derrick loves them so much. And for sure I will be watching half time. And I will click back and forth to the Puppy Bowl! Love those pups! As for videos for today, I’d like to do a Valentine’s Day craft and I also want to talk a bit about the way I eat. Those are the two videos I’m aiming for! I also must revamp my schedule, and when I get that done, I’ll talk about that too. Have a great Sunday! Chocolate Heart Cupcakes Click HERE to learn how to make the heart shape! INGREDIENTS: Cupcakes Frosting Darlene’s Tip: I did this before and I used balls of aluminum foil instead of marbles and it worked like a charm! You can use any brand cake mix that you want and you can save time and just buy the frosting already made. DIRECTIONS: Step 1: Heat oven to 350°F. Place paper baking cup in each of 30 regular-size muffin cups. Place 1 marble in each muffin cup between paper baking cup and muffin pan so baking cup takes on heart shape. Step 2: Make cake batter as directed on box. Fill each cup two-thirds full of batter. Step 3: Bake 14 to 15 minutes or until tops of cupcakes bounce back when touched and toothpick inserted in center comes out clean. Cool completely on cooling rack. Step 4: In large bowl, beat softened butter, powdered sugar, milk and vanilla with electric mixer on high speed 3 to 4 minutes or until frosting is light and fluffy. Add food color to make desired shade of pink. Step 5: Spread frosting on cooled cupcakes with knife or use decorating bag fitted with plain tip. Top with candy sprinkles.
